Creamed Chipped Beef on Toast (Gluten-Free)

Reviewed and edited by a celiac disease expert.

This recipe comes to us from Guhlia in the Open Original Shared Link.

    Celiac.com Sponsor (A12):
    Ingredients:
    3 oz. chipped dried beef
    4 tablespoons butter
    4 tablespoons white rice flour
    2 cups milk
    Black pepper to taste

    Directions:
Melt butter in frying pan on medium heat. Add beef and sauté for 5 minutes. Slowly sift in rice flour while whisking gently. Add milk very slowly to avoid clumping. If you like thinner creamed chipped beef you may want to add 2½ cups of milk. Add black pepper to taste. Serve over gluten free toast.

This is a real simple side dish with little prep that’s both fragrant and festive. I like using acorn squash because they’re small enough to serve everyone their own half, but this recipe is great sliced or in chunks. This version is mildly sweet but is easily downplayed with less sugar, or sweetened with more syrup.
    Ingredients:
2 acorn squash, halved and seeded
    2 tablespoons brown sugar
    3 tablespoons softened butter
    1 tablespoon maple syrup
    2 teaspoons ground nutmeg
    1 teaspoon ground cloves
    Pinch of salt and pepper
    Directions:
    Preheat oven to 400° F.
Arrange squash on a baking sheet.
In a small bowl, combine brown sugar, butter, syrup, and spices. Rub mixture over the cut sides of the squash and bake skin-side down for up to 1 hour. Remove when squa...

Down Home Red Beans and Rice (Gluten-Free)
I've been on a bit of a southern food kick lately, making things like fried catfish, blackened snapper, and the like. This recipe for red beans and rice makes for a nice meal on its own, or in combination with any of your southern favorites. It goes great with your favorite gluten-free cornbread.
    Ingredients:
6 cups gluten-free chicken stock 4 cups water ¼ cup white wine 4 cups cooked white rice 1 pound dried red beans, rinsed and sorted 1 pound smoked ham hocks ½ pound smoked sausage, split lengthwise and cut in 1-inch pieces ¼ cup chopped ham 3 tablespoons bacon grease 1½ cups chopped yellow onions 1 cup chopped celery ¾ cup chopped red bell peppers 4 bay leaves 3 tablespoons chop...
