    Heavenly Irish Potatoes (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This recipe comes to us from Kathy Bennett.

    Ingredients:
    ½ pound softened butter
    8 ounce softened cream cheese
    2 tablespoons vanilla extract
    5 tablespoons sweetened condensed milk
    3.5 ounce can Baker’s coconut
    2 pounds 10x sugar
    Cinnamon

    Directions (By Hand):
    Mix butter and cream cheese
    Gradually add in vanilla - mix well
    Gradually add in condensed milk - mix well
    Gradually add in sifted 10x sugar - mix well
    Mix in the coconut
    Scoop out by teaspoonfuls and plop on a cookie sheet
    Cover with waxed paper and
    Chill in the refrigerator for 15 minutes
    Roll into balls
    Roll in cinnamon
    Store in the refrigerator

    I know Carol's post is old, but for anyone else reading this recipe, it is more of a candy than a side dish. My grandma used to make Irish potato candy all the time and it was very similar to this.

    This recipe comes to us from Dick LeTourneau.
    1 pound lean ground beef
    1 pound lean ground pork (you can also add ground veal if you wish)
    2 minced onions
    3 minced garlic cloves
    Approximately 1 cup of gluten-free chicken broth
    1 teaspoon gluten-free chicken granules
    1 teaspoon gluten-free dry beef bouillon
    1 ½ teaspoon paprika
    1 Tablespoon dry parsley
    1 teaspoon black pepper
    1 teaspoon salt
    1 ½ mixed fines herbs
    ¼ teaspoon ground clove
    Approximately 4-5 potatoes, boiled or baked, and mashed. Brown the meat with the onions and garlic, add all the other ingredients except the potatoes. Let simmer about one hour and add the potatoes.

    ¾ cup fine gluten-free bread crumbs

    2 pounds ground buffalo
    1 onion cut in quarters
    6 plum tomatoes, each cut into 6 wedges or other vegetable like peppers, zucchini, carrots or potatoes

    Preheat oven to 375F.
