    Quinoa Salad with Veggies and Red Wine Vinegar (Gluten-Free)

    This tasty, nutritious salad blends tasty quinoa cooked in broth with your favorite vegetables for a culinary home run.

    Celiac.com 05/19/2018 - Looking for a nutritious, delicious meal that is both satisfying and gluten-free? This tasty quinoa salad is just the thing for you. Easy to make and easy to transport to work. This salad of quinoa and vegetables gets a rich depth from chicken broth, and a delicious tang from red wine vinegar. Just pop it in a container, seal and take it to work or school. Make the quinoa a day or two ahead as needed. Add or subtract veggies as you like.

    Ingredients:

    • 1 cup red quinoa, rinsed well
    • ½ cup water
    • ½ cup chicken broth
    • 2 radishes, thinly sliced
    • 1 small bunch fresh pea sprouts
    • 1 small Persian cucumber, diced
    • 1 small avocado, ripe, sliced into chunks
    • Cherry or grape tomatoes
    • Fresh sunflower seeds
    • 2 tablespoons red wine vinegar 
    • Kosher salt, freshly ground pepper

    Directions:
    Simmer quinoa in water and chicken broth until tender.

    Dish into bowls.

    Top with veggies, salt and pepper, and sunflower seeds. 

    Splash with red wine vinegar and enjoy!

    How are you finding a gluten-free red wine vinegar? It is almost impossible to find a steel-barreled red wine, let alone a red wine vinegar made from wine with no cross contamination via the sealant. (If you have any leads on wine makers who have shifted to steel for red wine -- and/or white wine producers within the US who are finally steel-barreling, I would love to know that too!)

    Red wine vinegar is gluten-free and we’ve never heard of any ever testing positive for gluten.

    A good Cobb salad is a satisfying culinary delight! Cobb salad is one of the easiest summertime salads to toss together, and one of my favorite to eat for lunch on a warm day. This recipes hold tight to tradition and makes about six servings.
    Ingredients:
    1 1/2 cups ham
    1 1/2 cups chicken or turkey
    6 slices of bacon
    1 avocado, sliced
    2/3 cup Bleu Cheese
    2 eggs, hard boiled
    2 small tomatoes
    1 head romaine lettuce, chopped
    1 cup baby spinach
    Directions:
    Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
    Cook bacon. Drain, crumble and set aside.

    These savory muffins make the perfect dessert, or just have them for a snack!
    Gluten-Free, Dairy-Free and Vegetarian
    Ingredients:
    1 cup uncooked quinoa 2 large eggs 1 cup Vidalia onions, finely chopped 1 cup dairy-free shredded mozzarella cheese 3 garlic cloves, minced 1/2 cup fresh cilantro, finely chopped 1/3 cup grape tomatoes, diced 1/2 tsp. sea salt 1/2 tsp. freshly ground pepper 1 tsp. chili powder 2 chives, finely chopped, for garnish 2 cups salsa, for serving Instructions:

    Gluten-Free Pasta Salad
    Here's a great pasta salad for your summer BBQ or picnic!   Ingredients: 1/4 cup pine nuts 1 pound gluten-free penne pasta 2 bunches asparagus, trimmed, halved lengthwise, and cut crosswise into thirds 4 ounces goat cheese, broken into pieces 2 scallions, finely chopped 1 Tbsp. fresh orange zest 2 Tbsp. finely chopped fresh parsley ¼ tsp. paprika ½ tsp. sea salt ¼ tsp. freshly ground black pepper Instructions: In a small skillet over medium heat, toast pine nuts, stirring often, until golden, approximately 3 minutes.     Celiac.com 01/01/2015 - I've been trying to eat more quinoa lately, and this recipe is easy to make, and delivers a tasty, nutritious dish that compliments most any entrée.
    Ingredients:
    2 cups chicken broth 2 carrots, chopped 1 cup quinoa, rinsed 1 tablespoon vegetable oil 2 cloves garlic, minced ½ cup chopped onion ¾ cup slivered almonds ⅓ cup chopped fresh Italian parsley Directions:
    Heat oil in a saucepan over medium-high heat.
    Sauté onion in oil for 5 minutes, until translucent. Add garlic and carrot, and cook 3 minutes more.
    Stir in quinoa and chicken broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.
    In a bowl, toss quinoa together with almonds and parsley. Serve hot or at room tempe...
