    Spicy Mushroom Stir-Fry (Gluten-Free)

    Stir-fries invite a blending of flavors and textures, so I always make it a point to look for ingredients that will compliment one another, and deliver loads of flavor. This dish is warm and filling and goes great over rice or gluten-free noodles. The roasted chilies and peppers heighten the soft texture of the mushrooms. This dish is also excellent when served chilled.

    When shopping for ginger, look for firm pieces free of any soft spots. Fresh ginger keeps for about a week. Make sure shitakes have thick caps and the fissures (the white underside) are white.

    Ingredients:
    1 cup sliced shitake mushrooms
    1 cup sliced oyster mushrooms
    1 cup sliced button mushrooms
    1 red bell pepper
    2 finely sliced red chilies
    1 jalapeño pepper
    3 cloves minced garlic
    2 tablespoons freshly grated ginger
    1 teaspoon chili flakes
    1 tablespoon olive oil
    2 tablespoon sesame oil

    Directions:
    Slice and seed the red pepper, chilies and jalapeño. Arrange on a broiler pan and coat with olive oil. Roast until skins have charred. Remove, cover and let steam for 10 minutes. Scrape black skins off, chop and set roasted vegetables aside.

    Heat sesame oil in a large wok or frying pan. Add garlic and ginger and fry for 2 minutes.

    Add shitake mushrooms and cook for 2-3 minutes then repeat with oyster mushroom and button mushrooms, cooking about 2 minutes each time.

    Toss in roasted peppers, chilies, and chili flakes and serve.

    Ingredients:
    2 cups cooked turkey
    4 cups broccoli
    1 red pepper, diced
    1 onion, diced
    5 green onions, diced
    4-5 garlic cloves, minced
    10 cloves
    2 tablespoons soy sauce
    2 tablespoons chili sauce (Thai Kitchen)
    2 tablespoon fish sauce (Thai Kitchen)
    2 cups cooked basmatti rice
    2 tablespoons olive oil
    Directions:
    Cook vegetables, cloves, oil, and 1 tablespoon of soy sauce and 1 tablespoon fish sauce on high heat until the vegetables are tender. Add turkey and cook until the turkey is warm. Add rice and the rest of the soy sauce and fish sauce. Add chili sauce. Mix and Serve.

    Coconut Mango Rice (Gluten-Free)
    There is so much to love about this southeast Asian desert. It’s creamy and sweet and it tastes great warm or cold. It’s also simple to put together and one of those meals that just tastes like summer. I’m a sucker for mangoes, but if you already have them on hand, sweet oranges, or juicy satsumas make a fine substitute. Toasted coconut makes a nice topping for a bit of tasty texture.
    Ingredients:
    1 cup rice
    1 14-ounce can coconut milk
    1 cup fresh mango chunks
    ½ cup mango juice
    ½ cup water
    1 tablespoon butter
    1 tablespoon olive oil
    1 pinch of salt
    Directions:
    Heat olive oil in a large saucepan over high heat. Add rice and stir until well-coated. Slowly add coconut milk, mango juice, water and salt and bring to a boil.

    Celiac.com 08/22/2013 - I love gyoza, Japanese pot-stickers that are often pan-fried, but can also be steamed. However, since giving up gluten, I've had to say goodbye to many of my old favorites, including gyoza.
    Now, I've experimented with gluten-free version of gyoza, but I haven't yet produced a winner. Until I do, whenever I crave gyoza, I fire up the grill, and get busy mixing up some gyoza skewers. I think they're a great alternative to traditional gyoza.
    My wife calls them grilled meatballs, but I call them naked gyoza kebabs, which, for me makes them even more appetizing than they already are. My wife may quibble, but we both agree that, whatever we call them, they are delicious.
