This recipe comes to us from Jean in Ohio:
Blend in plastic bag
½ cup gluten-free flour (I use Hagmans first blend)
2 teaspoon paprika
1 teaspoon salt
¼ teaspoon pepper
Preheat oven to 400. Melt ½ cup butter or margarine in shallow baking pan in oven. Shake chicken pieces in flour mix, Dip in melted butter, turning to coat evenly. Bake uncovered for 1 hour, turning at 30 minutes. Bake boneless chicken for 30 minutes. Bake nuggets for 15 minutes or until cooked through (Also can be used for coating pork chips. Bake at 425 for 15 minutes for ½ thick chips, 5 to 10 minutes longer for thicker chops.)
This recipe comes to us from Valerie Wells. I dont define exact amounts of the ingredient because it will vary with the size of your crock pot how much you want to prepare. I made this in two crock pots last evening for a crowd. Everyone liked it and went for seconds. It makes a nice presentation with the colorful spices on the chicken. The gravy that forms is nice and light. If youre one who cant tolerate tapioca, then you will need to mix corn starch or another thickener with the broth before pouring it over the potatoes.
Ingredients:
Carrots
Potatoes
2 tablespoons tapioca pearls (or other thickener of you choice)
½ to 1 cup chicken broth
Chicken pieces w/ skins on (skinless pieces would dry out with this cooking
method)
Turmeric
Paprika
Salt ...
Simply put, this dish is yummy! It’s also an easy way of breaking the ice with okra for anyone who’s yet to try. I love this recipe because it’s such a great base. It’s delicious over rice or with sausage, shrimp, or pork chops. Okra has great texture, absolutely perfect with the soft tomatoes and peppers.
Ingredients:
3 cups okra, chopped into ½-inch pieces
2 cups tomatoes, peeled and chopped
1 red bell pepper, chopped
4 slices bacon, chopped
1 yellow onion, diced
3 cloves garlic, chopped
A pinch of red pepper flakes
Salt and pepper, about a teaspoon each
Directions:
Add bacon to a large, heated skillet and cook until crisp. Transfer to a towel and add onions to skillet. Sauté until translucent. Add garlic and cook for another minute longer.
Add okra...
Anyone who has given up gluten has favorite dishes that they've had to give up, and which are difficult if not impossible to replace.
For me the list includes numerous dishes of the breaded and fried nature. I'm talking about dishes like fried chicken, fried catfish and chicken Parmesan. Bread crumbs, especially Japanese-style panko breadcrumbs, are one of the things for which I've not been able to find a suitable substitute.
The Japanese make a popular dish called Tonkatsu, which is a pork or chicken cutlet, breaded and fried in hot oil. The dish is often served with a curry gravy and rice for a hearty meal. It is also one of my favorites and one I had given up on after going gluten-free. Until now.
This method of preparation is highly versatile and works well for...
