So newly into this. A month. Got glutened terrible this weekend. Wedding. Ugggg. And now I'm just afraid to eat if I'm not home. I'm slowly starving to death

I know the feeling when I went gluten-free 4 months ago I was scared to death to eat out.  I have only eaten at 2 restaurants Wendys and only had a baked potato and Red Robin had a hamburger on gluten-free bun and steamed broccoli.  I had no issues with either place.  Hon, no need to starve yourself to death all fresh fruit and veggies, and meat not pre seasoned are all gluten free.  When I first went gluten-free I started with what I already had on hand, I was surprised with the items I found I already had that were gluten-free.  Have you checked out the safe ingredient list?  https://www.celiac.com/articles/181/1/Safe-Gluten-Free-Food-List-Safe-Ingredients/Page1.html

You won't starve. You may have to fix your own food and bring it along but that's why coolers and lunch boxes were invented. :)

There are some threads on here about what foods people eat for snacks, breakfast, lunch, dinner, when traveling by plane, by car, ship and even a bike and a train thread. Maybe those will give you some ideas?

Thanks for the links. It just frustrating when I'm on the go. I am back in school with 3 kids 10 and under and it's so hard to pack stuff for me and have their stuff done too. I know it will get better. It's just so overwhelming right now and I am just having a very blue day. Thanks for your support

one day at a time - if you look too hard at the big picture you will go bonkers!  do some reading on here, hit the cooking forum (they have some handy lunch-to-go ideas on there just search it) and take care of you.  it's a big change, treat it as such :)   you'll be ok - you're in a good place to get advice, hugs, and just vent.  this is the place where baby steps are ok and small victories are huge.

Blue days... yes, we've all had so many of those.

 

If you need something to fill you with calories I recommend peanut butter on a gluten-free cracker or bread. Literally 20seconds preperation time, a tasty snack which is calories dense. These kept me going. Then I discovered enzymes which allowed me to digest these calories!

 

The first months are the hardest, but things will get better in terms of symptoms and getting into a rhythm of this new lifestyle.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
