Hello! I am searching for a chocolate chip cookie recipe ( my favorite one!) I had found it on the peas and thank you blog, but not long after the blog was taken down, before I had a chance to write it down. I am kind if desperate for this recipe, does any one know it? I know it had oat flower ad brown rice flour and melted butter and one egg and one egg yolk, but not sure other than that and what the measurements were. Please help!

Oh no, I hate that!  Now I am starting to re-think the hundreds of recipes I have saved as web bookmarks.  I wish I could help you!  :(   Hopefully someone on here will have it saved!  Also, if you know who ran that blog and maybe if there is still a way to contact them, you could have some luck doing that.

Hi! I found your post because I was searching for the same recipe. It is the most amazing recipe I've ever made and its a family favorite for those with food allergies and those without. I was crushed to realize I didn't save it either! However, I was able to use the website "thewaybackmachine.org" that lets you look at screen shots of websites from the past. Luckily, the recipe was on there!! So since I feel your pain, because I can't go through a holiday season without these cookes, my multiple food allergy family depends on it, I had to come back and create an account just to post it here for you.

The Best Gluten-Free Chocolate Chip Cookies Ever

Makes 24 large cookies

  • 1 c. organic butter or non-dairy margarine, melted
  • 1 c. brown rice flour
  • 1 c. gluten-free oat flour (finely ground in a food processor or blender)
  • 1/4 c. + 1 T. cornstarch
  • 1 t. xanthan gum
  • 1 t. salt
  • 1 t. baking soda
  • 1/4 c. organic sugar
  • 3/4 c. brown sugar
  • 1 organic egg + 1 organic egg yolk or 2 flax “eggs” (2 T. ground flax + 6 T. water, whisked and allowed to thicken)
  • 2 T. organic or non-dairy milk
  • 1 1/2 t. vanilla
  • 1 1/2 c. semi-sweet chocolate chips

 

In a medium bowl, combine the rice flour, oat flour, cornstarch, xantham gum, salt and baking soda.  Set aside.

Using an electric or stand mixer, cream together melted butter and both sugars.  Add the egg and egg yolk (or flax “eggs”), milk and vanilla and mix well. Slowly incorporate the flour mixture until thoroughly combined. Add the chocolate chips and stir to combine.

Chill the dough in the refrigerator until firm, about an 1 hour. Scoop big spoonfuls of dough and shape them into cookies on a baking sheet.

Preheat oven to 375 degrees.

Bake for 11-13 minutes, until edges of cookies are starting to brown.  The cookies will not look set, but will continue to cook on the pan.  Remove from the oven and cool the cookies on the pans for 2 minutes. Move the cookies to a wire rack and cool completely before eating or storing in an airtight container.

This is my recipe that I forget where I found. My husband super loves it and eats more than I do. I also sometimes make it with mini m&m's for him. I was actually thinking about making them again and experimenting with making them chocolate chocolate chip or chocolate peanut butter or butterscotch chip.

 

Chocolate Chip Cookies

 

INGREDIENTS

1 ¾ cups quinoa flakes or oatmeal

1 ¾ cups flour blend

1 tsp baking soda

1 tsp xanthan gum

½ tsp salt

½ cup butter or coconut oil

1 cup dark brown sugar

½ cup sugar

2 large eggs

1 tsp vanilla

1 10-oz pkg chocolate chips

1 cup chopped walnuts, optional

 

INSTRUCTIONS

 

  1. Preheat oven to 375°. Line 2 cookie sheets with parchment paper.
  2. Finely grind quinoa flakes or oatmeal in food processor. Add flour mix, baking soda, xanthan gum and salt and blend 5 seconds.
  3. Beat butter or coconut oil and both sugars in large bowl until well blended.
  4. Beat in eggs and vanilla. Gradually mix in dry ingredients. Mix in chocolate chips and walnuts.
  5. For each cookie, form one rounded tablespoon into a ball and place on prepared cookie sheets. Flatten slightly.
  6. Bake until edges are golden brown, about 12 minutes. Cool 5 minutes on cookie sheets. Transfer to a rack and cool completely.

 

Note: recommended flour blend is 2 parts rice flour, 1 part tapioca starch, 1 part corn or potato starch

      Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have.It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

      @Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

      Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

      Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!
