Glutened But Not Feeling Glutened

Hi,

I've been eating gluten-free for just over three weeks. Last week, I had japanese food including sticky rice and imitation crab. I had no idea these had gluten! I found out today. However, I was fine last week when I ate them.  Is it possible that I glutened myself but did not outwardly feel glutened? Like maybe I just did slight internal damage without getting my normal side effects? I might have had some slight gas, but that's all I remember.

I have positive for celiac blood work and an incompetent GI who said I was negative for celiac. (the DNA test was negative, but positive antibodies and EMA) Waiting for my appointment with another GI. Decided to go gluten-free anyways, have been feeling better for about a week.

Yes, we don't all react immediately or the same. There are some celiacs out there who have no obvious symptoms at all. It really varies person to person.

Assuming you have Celiac - Its only been 3 weeks.  You probably haven't been completely gluten-free.  There is a learning curve and it sounds like you are eating food you haven't prepared.  Meaning- you might not be getting a reaction because you haven't stopped making antibodies.  Even if you had been completely gluten-free, antibodies can take a while to go down and may even go up for a few weeks.

So my 2cents likely has nothing to do with gluten, but also I didn't know the fake crab contained it either at the time. Fake crab is a horrible product that no one should eat.   Before I was gluten-free (am only 4 weeks so now) I ate lunch at a buffet and one of the items was small shrimp, peas, carrots, and a white sauce (think thin white lobster sauce in a chinese restaurant) and fake crab.  This was about a year ago.  When I returned to work, I was itchy, I had a hive on my neck and one on my cheek, and the bottoms of my feet were hot and "burning" and when I removed my shoes and socks, literally the bottoms of my feet were red. My coworker said - "what did you eat?" and I've eaten there before, but never that fake crab, so I assumed that was it.  I drank a lot of water, took a benydril, and wet some paper towels to put cool water under my feet. Never again.

      I eat a lot of dairy but its intermittent is this burning so I would assume it would happen all the time. Plus I have been tested for lactose intolerance  etc and I am fine and the other symptoms of that I don't get. As a aside  my dad died last month after a long illness so I wonder if the stress of that might be a influence as a bodily reaction to stress.

      You should be fine.  You may start feeling better within a few days.  Someone who is very low in thiamine may notice improvement within hours.   Did you get the NeuroMag  or another magnesium supplement?

      Yes Bobs redmill cgf oatmeal I started when I became gluten-free. So taking all 3 with breakfast should work? Will I notice any reactions getting used to these or should I be fine. Thanks

      Hello, @pilber309, welcome to the forum! Are you currently consuming dairy?   You mentioned something about lots of yogurt and cheese, but did you cut it out or are you eating lots of it?   Could you clarify please? Some people with Celiac react to casein, the protein in dairy the same as to gluten with antibodies and villi damage.
