What Is The Circle With "gluten-free" Inside On Food Products?

I know this has a name and has been covered somewhere on here, but I cannot remember where to save my life.  Also, is this "Certified" Gluten-free compliant with the government standard of 20 ppm, or is it 100% gluten free?  I've never had a problem with anything I've eaten with this symbol on it, but I was working tonight (I work at a national superstore that makes many people cringe  ;) ) and all sorts of yogurt in the dairy that I was stocking had this on it.  It just piqued my curiosity and I figured that this would be the place to come!

First, there is no way to test for 0 ppm of gluten. If a food tests at <20 ppm, that does not mean it has 19 ppm. It may have 10 or 1 or 0, those are all less than 0.

If you're talking about the encircled gluten-free symbol like the one shown on the first link below, it's the Gluten Intolerance Group's certification logo:

So far I have not a reaction to any product with that label on it, so to this point I think it is a pretty good standard to go by.

      I didn't ask a doctor about this actually. I did ask several doctors a long time ago and they told me gluten has nothing to do with hashimoto's. One of them told me to do a gluten challenge to test for celiac, but at the time I was in graduate school so couldn't afford to be even more ill than I was. If you have the symptoms, I really don't advise you to do a gluten challenge. It messed me up mentally and physically for months. At the same time, I benefitted from doing the challenge in the sense that it convinced me that all my symptoms were truly from gluten - even stuff like insomnia! So now I am terrified to eat gluten, whereas before I would have a little once in a while and not notice anything dramatic.

      I am in a similar situation where I can't feasibly do a gluten challenge but have all the symptoms and I have 2 celiac genes. I'm curious if your doctor advised you to eat as if you had a diagnosis or if they were more dismissive about it.

      Negative, although I had most of the symptoms of celiac disease. I now eat as if I had a diagnosis.
