Chiffon Cake - Gluten Free, Dairy Free, Corn Free, Soy Free

Hi All,

 

Me and my boyfriend have been watching "good eats" recently on netflix. I watched Alton's chiffon cake episode and decided to make a gluten free rendition.I have made several cakes, which have been passable. This is the first one where I felt like I could probably continuously replicate the results.

I followed his recipe exactly (except with my own flour blend + xantham gum) and they turned out SWELL. Really fluffy and moist. I think peaking the egg whites makes a huge difference in removing any would-be density.

 

Alton's Ingredients: 

5 1/4 ounces cake flour
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
5 large eggs, separated
6 ounces sugar, divided
1/4 cup water
1/4 cup vegetable oil (I used canola)
1 teaspoon vanilla extract
5/8 teaspoon cream of tartar
 
My Cake Flour:
1.5 ounces - Sweet Rice Flour (Bob's Redmill- I buy this on amazon.)
1.5 ounces - Tapioca Flour (Bob's Redmill)
1.25 ounce - White Rice Flour (Arrowhead Mills)
1 ounce - Millet Flour (Arrowhead Mills)
+ 1 tsp xantham gum 
 
 
And then I just followed the instructions per the link. I do not have a stand mixer, so I use my large food processor. This did not peak the egg whites as well as a stand mixer probably would have, but it did the job sufficiently enough. They did not rise quite as much as Altons, but they did appear to have risen quite a bit when I initially took them out of the oven. After cooling, they shrunk a bit. This was disconcerting until I took a bit and they were delicious.

My frosting turned out gooey, so I'm not going to share that part. (It's not the most appealing looking, just chocolate with mini chips mixed in. It tasted good, but it wasn't my best frosting by far.) However,the cake part was awesome!

I have a  gluten-free  chiffon cake recipe  but  it  has  champagne in it!!!!   Yours  looks  good  as well  without  the  booze.... I don't  drink  but I cook/bake  with  beer  &  wine!

Awesome!  I love Alton Brown and still watch Good Eats reruns all the time.  I want cupcakes now.... gonna write this recipe down!

Thanks! I'm obsessed with sweet rice flour. I think it makes a big difference.

For  some reason my  scanner  will not  scan  so  I can't post the recipe  , sorry. But  look in the  October  issue  of Food Solution Magazine....or  I'm  fairly sure  it  will show  up on Pinterest at  sometime , maybe on there already.....

      After waisted time of new care team, yet again EXHAUSTED saw new gi today in Modesto, though all my ailments im not getting any kind of concern of me being celiac and sentive to just about everything since menopause. Dr daid why don't I go see you guys because my blood shows zero for celiac. I told him im glutenfree since 1994 by colonoscopy with biopsy positive celiac sprue by GI.Its RIDICULOUS when im bringing in material from this site of knowledge as well as the autoimmune institute,and  there's zero interest on their part.Medical IS causing me depression.Im view as a disability chaser, IM STILL RECOVERING from being a bus driver that im still healing and having more issues, now I may have multiple sclerosis or meningioma. Ive reached out, wrote letters, NOT feeling well. This is inhumane.

      I was taking medicine for sibo but it was not agreeing with my stomach at all.Was on gabapentin but it amps me up.I was taking in morning because it wasn't allowing me to sleep.This has always been an issue with medicine and me.Even going to dentist, the good shot that numbs you once, I can't take because it makes my heart beat fast and I  get the shakes.I have to take the crappy stuff and get injected always more than 4 times always.Its infuriating

      I showed one doctor I went to once because completely clueless of celiac disease and yes that one was connected to a well known hospital and she said oh thats just a bunch of people that think they are celiac coming together. I said um no they have doctors and knowledge behind what is being written. So bay area is Downplaying this site! SADLY

      If you successfully digest gluten with enzyme supplements so it won’t give you side effects, your challenge won’t be worthwhile because the digested fragments of gluten also won’t stimulate antibody production or cause intestinal damage.
