Vegan soy milk powder alternative for vegan cheese sauce

Hi all,

I have a vegan and gluten-free cheese sauce recipe that's absolutely amazing. One of the ingredients is 1 cup of soy milk powder. Normally this wouldn't be a problem but recently I've noticed a correlation with me ingesting soy and me breaking out in acne, rosacea, and additional GI issues whenever I have soy similar to how gluten affects me. I'm experimenting right now with being soy-free also, so now my vegan gluten-free cheese sauce has to be vegan gluten-free and soy-free. Soy-free is new to me... anyone have any recommendations or advice on soy milk powder alternatives?

There is a vegan place here that makes a cashew cheese sauce.  Maybe try a cashew milk?  Not sure if it comes  powdered....

The cheese sauce does already have cashews. The soy milk powder helps thicken it and add some flavor. If there's not much else as an alternative I may double up on the gluten-free corn startch or even add some rice flour or may try almond flour.

Sorry.  I dont know the recipe.  If you are looking for starches/ thickeners - you could experiment with potato starch , arrowroot, or a variety of different " flours".

here are the ingredients:

1 cup coconut milk
2 cups water
1/4 cup gluten-free nutritional yeast
2-3 TSP salt
1/2 cup raw cashew peices
1/2 cup lightly sauteed red bell pepper
1 tbsp pure lemon juice
1/4 cup gluten-free cornstartch
1 tsp onion powder
1 cup soy milk powder, plain

      @TempCloud  How are you doing?  I hope you aren't reacting too badly? I would most likely react like Trents.  That said, I have read accounts of some coeliacs not showing any symptoms after glutening, after a long break from eating gluten.  But should that happen to you, unfortunately it should not be interpreted as the 'green light' to go back to gluten.  I am afraid coeliac disease at the present is a lifelong condition, and so, too, must be the gluten free diet.  Here are some tips to try, to help you feel better.

      If it was me, within 2-3 hours I would be throwing up violently with excruciating abdominal cramps for 2-3 hours. When this phase was done I would go into the diarrhea phase for several hours. But every celiac is different in how they respond to getting "glutened".
