Well I just found a shrimp ring at whole foods for $8.99 for a 16oz one....tossing the questionable sauce. Does anyone know of any Cocktail sauce thats gluten, corn, and xantham gum free? I found Trader Joe's but it has xantham gum...did not make me puke oddly when  I tried a bit but I want to play it safe. So looks like we are having shrimp with our Easter if I can track down some sauce.

PS Christopher Bean Coffee just put a Easter sell on coffee. Stocking up on flavored ones myself.

Shrimp is so good.  I have not had it with sauce though since going gluten-free.  I wonder if we'd have to make our own sauce with a ketchup that is safe and hopefully most horseradishes would be safe, but I've never looked at the ingredients in it before. I always assume it's just pure ground horseradish, but now I never assume anything anymore. 

I just got my Christopher Bean coffees a few days ago. :) I tried the Amaretto Biscotti one and really liked it.  It was very strong in that apricot almond sort of way, but that was kind of what I was craving, so I really enjoyed it.  I tried the chocolate glazed donut one, but didn't really love it.  I don't hate it, but probably won't buy it again unless I develop a taste for it by the time i finish the bag, hah!  I did taste some chocolate, but it reminded me more of an actual strong chocolate or chocolate liqueur or something. I don't know.  Yesterday I made a cup and I mixed the chocolate glazed donut and the amaretto biscotti together. Not bad.  I also got a trial size of the Jamaica Me Crazy and also the Mistletoe Mocha, but haven't tried those yet.  Maybe today.  It's rainy and cold and damp here and some hot coffee will hit the spot.  I love that Christopher Bean offers decaf.

Yeah the doughnut one required quite a bit of sweetener, and while there was the doughnut flavor...you sorta had to let it sit in your mouth for while and think about it it was a ending to the cupping notes but present....EASTER sale right now with $2 off each bag with them.

I think I tracked down a corn free and xantham gum free cocktail sauce, but more sodium and sugar then I would like. >.> I did find a good siracha mayo I am thinking of getting from JUST condiments.

Easter update, my mother is coming over tomorrow so we can fix the deviled eggs and make the lemon ricotta scones together for a Easter lunch after church on Sunday. I have changed the menu up so, we are using a riced broccoli with sauteed onions cooked in mushroom broth and served over miracle rice >.> cutting corners lol. And we opted for ham steaks that are gluten-free from our local HEB I will sear and cook in a cast iron skillet so their will be less leftovers then a whole ham, and that shrimp ring, we are dropping the beans and the whole family is doing low carb (both parents are diabetic) I and my rolls are also going to be done.....I am debating if I want to do myself some salmon since the ham will not agree with me.

Constant set backs with the broccoli dish led to a epic new dish. Sold out of mushroom broth, my onion was bad so improvised 2cups vegetable broth, 1tbsp onion powder, 1 tbsp coconut amino, 2tbsp butter flavored coconut oil, 2tsp liquid smoke cooked the riced broccoli in it put over miracle rice and topped with cheddar. ....could have used diced ham or bacon on it for perfection but works and taste good. 
I then served up with everything else have a picture...note rolls were in the oven.

1 Tub of Frozen Strawberries

1 small container of cool whip (or whipping cream if you prefer to make your own)

1 cup chopped walnuts

1 Large Box Strawberry Jello

Defrost Strawberries and separate juice from the berries.   Make Jello with the 2 cups hot water as instructed on the box, but use the juice plus whatever cold water you need to make the 2 cups cold water needed.    Let jello set up.    Once jello is set up spoon it out and into a bowl add cool whip and nuts and fold it all together.   Refrigerate an hour before serving.

That all looks delicious.  Ever since my stomach issues, both broccoli and cauliflower bloat me, but I am hoping once my stomach heals more maybe it will get better.  I miss them both as side veggies and in cooking with them too.  I had really liked spaghetti sauce on cauliflower.  I never thought of ricing broccoli.  I bet it was really good. 

We ended up doing the Hormel Cured 81 Spiral Ham that they emailed and verified was gluten-free.  It was so good, very tender and moist.  And made scalloped potatoes (used white rice flour to thicken the sauce), asparagus, and then a homemade, crustless cheesecake for dessert (with cherries on top, I got a bag of frozen ones and thawed them out).  We made deviled eggs too.  Everything was delicious, but something bloated me awful, and on and off I got a very mild stomach ache here or there.  Then stupid me ate leftovers Monday night for dinner.  There should have been no gluten in anything (and with gluten my stomach gets much worse pain and I also tend to lose a few pounds if I accidentally eat any), so I don't think it was a gluten issue.  But something didn't agree with me. We made the cheesecake for New Year and I was okay, so I don't think it was that. Unless just fiber from the cherries, onions, and asparagus. I have no idea, but it was annoying. I have been taking iron again too and that sometimes bothers my stomach.  I have no idea what the culprit was, or perhaps it was a combination of things.

Thank you!  That sounds delicious and like something my kids would really like!

I ended up making chocolate cupcakes.  I frosted half with vanilla and half with chocolate frosting and decorated each one differently.  They looked so pretty and all got eaten.

      @catnapt,  I'm sorry you're having such a rough time.   How much wheat germ and how much gluten were you eating? Lectins in beans can be broken down by pressure cooking them.  Do you pressure cook your beans?  Were you pressure cooking your wheat germ? What drugs are you taking?  Some immunosuppressive drugs affect IgA production.  Do you have anemia?

      oops my gluten challenge was only 12 days It started Jan 21s and ended Feb 1st   worst 12 days of my life   Does not help that I also started on a thiazide-like drug for rule in/out renal calcium leak at the exact same time No clue if that could have been symptoms worse 🤔

      Welcome to the forum @Known1, What reaction were you expecting? Pipingrock.com High Potency Vitamin D3, 2000 IU, 250 Quick Release Softgels $6.89 I've have been taking the 10,000 IU for close to 10 years. When I started with vitamin D I worked my way up to 10000 over several weeks.  Even at 8000 I felt no noticeable difference.  Then after a few days at 10000 it hit Whoa, sunshine in a bottle.  celiac disease causes malabsorption of dietary D and you've poor UV access.  It took me from 2015 to 2019 to get my 25(OH)D just to 47 ng/ml.  Another two years to get to 80.  70 to 100 ng/ml seems to be the body's natural upper homeostasis  based on lifeguard studies.  Dr. Holick has observed the average lifeguard population usually has a vitamin D 3 level of around 100 ng/ml. Could it be that our normal range is too low given the fact that ¾ or more of the American population is vitamin D deficient? Your Calcium will increase with the vitamin D so don't supplement calcium unless you really need it.  Monitor with PTH  and 25(OH)D tests. Because of your Marsh 3 damage you need to ingest way more than the RDA of any supplement to undo your specific deficiencies. I believe you are in the goiter belt.  Unless you have reason not to, I recommend pipingrock's Liquid Iodine for price and quality.  The RDA is 150 to 1100 mcg.  In Japan the safe upper level is set at 3000 mcg.  Start with one drop 50 mcg to test for adverse response and build up.  I found 600 mcg (12 drops) a day is helping repair my body.  Iodine is necessary to healing.  90% of daily iodine intake is excreted in urine.  A Urine Iodine Concentration (UIC) can tell how much Iodine you got that day.  The thyroid TSH test will not show iodine deficiency unless it is really bad.

      I don't know if I am getting sufficient Omega Threes. I read about  phosphotidyl choline may cause heart issues. I will have o do further research on heathy Omega 3 supplements or from foods. Is there a blood test that can tell you everything level in your system such as Thiamine, Benfotiamine levels etc? Thanks

      If lectins were my problem, I would react to wheat germ (the highest source of wheat lectins) and beans. I don't. I only react to bread and pasta, which are the highest sources of gluten. Therefore, my issue is wheat-specific (Gluten/ATIs), not a general lectin issue.   I have eaten a supposedly high lectin diet (I say supposedly because lectin content in these foods is greatly reduced by proper cooking and I eat very few of those foods raw, and even then, rarely!!) for years. My health has improved greatly on my whole foods plant forward diet. I have asked all my drs and a registered dietician about my diet, asked if eating such a high amnt of fiber might interfere with the digestion of any other nutrients and the answer has always been NO.     while doing the gluten challenge I did not eat ANY wheat germ (since it doesn't have hardly any gluten, and I was too sick from the bread and pasta to want to eat much anyway) I will NOT put that poison in my body again. That was a horrific experience and if this is what most celiac patients have to deal with, I am very sorry for them I don't care if I have celiac or NCGS I won't intentionally cause myself that much pain and suffering it's not worth it.
