Hi guys,

<_< It seems we all have problems with this bread thing. I have had this problem twice now and it might be my bread machine. My bread sometimes comes out brittle on the outside. When cut it is sticky on the inside. Anyone got any ideas on why this might occur.

Possible solutions I thought of: :blink:

1) Before making the bread I was putting my own flours together to make Betty Hagmans Featherlight mix and I sifted them together, therefore possibly causing less flour than the three cups needed for the recipe.

2) Water temp. is off.

okay so here the skinny if someone is wondering. I asked a baker today and he said that I should add a little more dough and that there is too much sugar.

Are you making the large loaf? Try the medium size - hopefully the middle will cook better.

For oven baking they sometimes suggest longer time and lower temp to get the insides fully cooked without the outside getting overly crusty. Can your bread machine do that? What if you mix it in there, then put it into the oven to bake? The sugar is there for flavor, browning, and to feed the yeast - it shouldn't affect the wet inside/dry outside problem.

I have found that if I wrap the bread in plastic wrap right after removing it from the bread machine (still hot) the crust is very soft.
