I Think I Get It Now.....

OK_ I need some confirmation here. As many of you know, one of my worst symptoms, besides the weight loss, is feeling like food is stuck in my esophagus after I eat. I feel a pressure which makes my heart rate go up and I feel anxious. Well, just today, I was reflecting on the alarming improvement of that since 3 wks gluten-free- although there have been some setbacks w/ possible accidental glutening.

I just had a nice afternoon snack of wheat free waffles, strawberries, aunt jemima's syrup (there was teensy bit left and I'm trying to clean out the frig), and these roasted frozen potatoes from trader joes. Immediately while eating, the food is all stuck in my throat. I feel like I can't even swallow correctly, and the food is just sitting in my chest. I went to lay down. I passed out for 2 hours ,I don't even remember. I woke up with my heart beating 120 times a minute, feeling anxious, racing. I went downstairs and grabbed the Aunt Jemima bottle. I looked on the internet. It is supposedly not gluten-free-barley. Then, I rechecked the potatoes. I bought the wrong ones. Included in the ingredients- Malodextrin, soy sauce, (WHEAT, soybeans, salt). It's the potato medley, not the roasted potatoes, that are gluten-free. Now, right after I ate I was convinced that I have a swallowing problem not related to gluten (the heavier the food is it doesn't move down my esophagus). Then after I awoke to find out I WAS glutened, it's all making sense. Does anyone else have a panic attack reaction to eating gluten?

I called Mayo Clinic today. They have received my biopsy (for 2nd opinion), so I'll keep you posted- but these symptoms are enough for me now.

Learning this ingredient thing is hard, really hard.......

I most def. have had panic attacks related to getting glutened...

When I'm having a gluten reaction, I get anxious. The swallowing, and feeling like you are going to choke problem also comes back--although not as bad as before I went gluten-free. Back then, I would drive myself crazy while eating--over-chewing everything, so I wouldn't choke on it or have it get stuck in my throat. Happily, that is pretty much gone now--except, as I said, when I get a reaction.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
