Pretty easy, pretty cheap and pretty good pie crust

As a newly diagnosed celiac, I am fairly appalled by the high cost and hideous taste of most baked goods.  I did come up with a simple pie crust that, at least, does not distract from the enjoyment of a piece of pie.  I made 1/2 of the  bisquit recipe from the King Arthur's web sight, using King Arthur's Baking Mix. ( similar to good old Bisquik Mix.)  I  used a little over half the dough to spread in a 9 inch pie plate.  I spread it very thin, dusting a little of the dry mix over the top to keep the dough from sticking to my fingers.  I baked this at 350 degrees for about 15 minutes until it was lightly browned.  I used the crust to make a banana cream pie, of course cheating with a Jello Cook and Serve pudding mix.  My poor, suffering husband, who has had to put up with my near inedible baked creations, said the pie was "not bad."  He finished his piece.

               Crust recipe 

1/4 cold butter

1 cup King Arthur's Baking Mix

1 egg

1/6 cup cold milk 

Cut the butter into the mix with a fork.  Stir in eggs and milk.
