G'day from the Land Down Under

I'm so glad to be here and needing some tips on gluten free, egg free fresh pasta

By way of introduction, I was diagnosed with MS back in 2011 and then almost as big a shock discovered I'm gluten intolerant in 2012. 

When life gives you lemons as they say the only thing you can do is make lemonade. So I radically altered my diet going from a meat eating carnivore to gluten free vegan plus seafood, regularly exercising and  meditating on the Word of God. 

10 years on, I'm drug free, am able to walk 18 holes of golf and hold a full time job. My neurologist says I'm his best patient. He puts it down to luck but I give the credit to our Creator and changing my lifestyle.

Anyway, I've finally bought a pasta maker and am keen to try it out this weekend.  My favourite bought pasta is San Remo Fettuccine which lists contents as Maize starch, soy flour, potato starch and rice starch. So I figure this maybe a great place to start.

Would anyone be able to make an educated guess as to the rough quantities to mix together the ingredients above please?

Better still, I'd love to know your go to favourite flour mixes for making fresh pasta that don't contain eggs, butter, milk, cheese please?

Welcome to the forum, Alex! I appreciate your attitude of praise! Obviously, you are someone for whom life's glass is half full instead of half empty.

With switching from meat to seafood for protein, do you have any concerns about heavy metal toxicity?

i also love your attitude of gratitude!!   i am 10 plus years into my lifestyle/diet change and i feel fantastic :) and blessed.  

i do make my own pasta but i don't use any particular mix/flour.  i just wing it - it turns out pretty good every time, but i have made it a lot over the years, so i have had my failures early on :D i do like to play with my food!!  my biggest problem was if your dough is too wet, it'll stick to the rollers.  good luck!  and welcome to the forum :)

Thanks so much for the replies, what a friendly bunch.

Trents I am certainly aware of the mercury issue in fish but will only adjust my diet if yearly blood tests show any concerns. I think the Mediterranean like diet I'm on is most delicious eating sardines, salmon, prawns, calamari, white fish and more. Nothing better than beautiful seafood and glass of wine in moderation.

Notme you have the luck of the Irish to be able to just wing it. But how satisfying is it when you make something new and it actually works, eh. I've had many failures but more winners overall. My crowd pleaser is a roasted vegetable gluten free pizza.

And finally Mr Adams, the creator of this wonderful community, thank you. I did do a search for pasta recipes but your link was spot on. The gluten-free recipe 1 had the specific quantities I was looking for so I will give it a go next time.

So, drum roll please to announce the result of my first fresh pasta making session - ba bum. No good.

I tried someone's highly rated recipe from another website but the dough even after 40 minutes in freezer was too fragile to go through the pasta machine. So I just rolled it out manually and gently, cut into strips and cooked for 4-5 minutes.  It didn't look commercial quality but I mixed it through a lovely chilli pasta sauce and thought not too bad.

So next time I will try your recipe no 1 and think I'll add a flaxseed egg to ensure it binds together sufficiently.

Tip of the day: if you can't think of a word, say "I forgot the English word for it." That way people will think you're bilingual instead of an idiot.

I’m glad the #1 flour mix recipe might work for you. Interestingly that recipe, and the others there, are among the oldest posts on this site, dating back to ~1996. Back then celiacs had to spend lots of time experimenting in the kitchen if they ever wanted to eat the things they loved again.

So glad to hear that you're doing so well after going gluten free.

I've never made my own pasta, even before going gluten free, but I can tell you cooking store-bought, gluten-free pastas on very low simmers helps keep them from breaking down.

My favorite gluten-free flours are from King Arthur though I don't know if they are vegan. The ingredient lists look okay until you hit the vitamin fortifications which are always going to be a danger zone for a vegan.

I have heard that it is not uncommon for celiacs to be misdiagnosed as having MS. Again, not an area that I'm all that familiar with but my understanding is that those who have gluten ataxia are the ones who are likely to have this misdiagnosis.

My favorite store-bought gluten free pastas over the years have been heavy on the potato flour so if you're making your own flour mix, I recommend experimenting in that direction. Best of luck to you in finding the perfect recipe.

Thanks Gods gal, I love your handle. As they say if at first you don’t succeed.....eh?

Always learning what an intriguing post. I do take vitamin B12 and vitamin D but they are the only fortifications I need to help me. Lots of foods have milk, eggs, cheese added which are a big no no for MS. 

As MS is an immune response where body is attacking itself there does seem to be an abnormally high number of dual diagnosed and they really don’t agree on cause or cure yet. But you can’t get diagnosed with MS unless evidence of lesions in spinal cord which normally coincides with oligoclonal banding in spinal fluid. I appreciate both MS and Celiac are miserable conditions, however it’s the physical and mental disability that frightens me with MS. 

I can sign off without a little something extra.

I was never confident enough to make my own gluten-free pastes, but used the San Remo range available at my local New World. They have 4 types and I definitely will not go back to other brands now. It's fast, convenient and delicious. Children love it!

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.
