Seeking A Bread Recipe

I posted this before but nobody understood my headline, so I'm trying again. I have many food allergies, and I'm struggling to find a bread recipe I can work with.

I want to come up with a recipe for sandwich bread. However, the ones I've found thus far all contain things I'm allergic to. My allergies are extensive, so I'm including a list of ingredients I know I can work with.

millet or rice flour

baking soda

vitamin C

salt

honey or agave nectar

olive or safflower oil

This is technologically possible, but I need some help coming up with a viable recipe. If anyone can offer opinions or assistance I'll appreciate it.

How difficult for you! I'm so sorry you have such a rough time of it.

When my intestinal issues began and it became evident I had suddenly developed food intolerances, like probably everyone here, I began surfing the net for information, ideas and suggestions. I came across one website devoted to providing special foods and rotation diets for those with severe and extensive food allergies. I was impressed by the amount of effort that had to be made by such individuals to eat just to stay alive, and bookmarked the site in case others needed it.

While the site does not contain recipes, it does provide unusual food products and diets for those who are allergic to everything. The owner of the company is a scientist who developed the products when trying to deal with her own 3 children with severe food allergies. It may not be what you are looking for, but maybe it is something you can use.

Thought I would also let you know that this company, Special foods, sells a number of unusual flours and includes recipes with the flours. The recipes are specially forumulated to avoid most allergens. I would also think that you could contact the owner. I get the impression she would be willing and able to help.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
