Hi!

I'm new still and wondering if anyone else can eat gluten-free potato chips with no problem yet not eat a simple baked potato (with NOTHING but my usual salt) and have it cause intestinal upset? This seems so weird to me as I KNOW I can tolerate Cape Cod lowfat p chips and I also know if I bake my own potato I will have trouble that night. Just wondering...

Are you baking the potato in the skin on the rack in your oven where gluten foods have been cooked?

It is likely the skin that is the culprit here. I am able to eat PEELED white potatoes occasionally, the skin contains high levels of salicylates (and who knows what else that could be causing a reaction in susceptible individuals).

Also, especially baked potatoes, are so starchy, that the body converts them instantly to sugar (faster than white flour products). It is likely that your body can't process the chips as quickly, and so they may cause fewer problems. Just my opinion, of course.

I don't know the reasoning, and I don't have a problem with baked potatoes, but if my stomach is upset, sometimes the only thing I can eat is Ruffles.

Thank you all!!! Ursula, that's very interesting about the salicytes. (I'm sure I just spelled that wrong.) I don't eat the skin because I've assumed it's too rough but maybe just being cooked in it would do it. Boy, the body is a complicated thing! I DO put them on the rack sometimes but the only gluten things that I cook for my family are in pans.

That's also so funny about the Ruffles. Sometimes you just have to trust your body to know what it likes and doesn't, I guess. Take care.

Ruffles? That makes me laugh. :) Seems like potato chips would be the worst thing for an upset stomach, but I guess whatever works for you!

Seems strange to me, too, and it's my stomach! I ate so many of them when I was really sick that my husband said I should be the spokesman for them. The bag even matches my car, and I always had a bag of them in my car. I don't think it would have been a profitable campaign though with me there saying I'm eating them because they're fattening and I need to keep my weight up. :lol: If I eat a meal and it's not sitting right with me, sometimes a few chips helps.

I have to laugh, because I eat Ruffles all the time, and if I have an upset stomach, they're one of the foods I can eat that won't make it worse. I eat the Natural ones. But I have no problems with potatoes either.

      Interesting, when I suffered for a few months with ectopics I noticed that carbohydrates would cause indigestion and bloating in my stomach, then that would lead to my heart skipping beats, and I could feel it in my throat, it was very unsettling.  My last serious bout of this was after eating a Muller Rice Pudding for breakfast.   I happened to be wearing a 48 hour halter at the time and cardiology picked it up, but they weren't worried about what they saw. There was some British doctor who'd made some videos on the Vagus nerve that I remember watching at the time which made sense of what I was experiencing, there did seem to be some sort of connection.

      I asked my cardiologist about stopping vitamins.  He said his tests account for all detectable vitamins from sources other than food.  I only need to stop them for a couple of days.  He has me keep records of meds and vitamins I've ingested over the past 10 days and prior and he does his calculations.

      Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.
