Millet Pancakes - Vegan

Here is a recipe that my wife has been making that is delicious AND vegan. The tofu, optional, adds some additional protein, but doesn't affect the taste, so if you are soy intolerant, leave it out:

2 cups millet

2 cups water

1 banana

1 tablespoon maple syrup

1 teaspoon vanilla

1/4 teaspoon salt

(1/2 to 1 cup firm tofu, drained - optional)

Blend the millet into a powder, place the ground millet, water, banana, maple syrup, and salt into a blender (We prefer the Vita-Mix), and plend until very smooth.

Pour the batter onto a hot, lightly oiled nonstick griddle or skillet and cook until puffed and bubbly. Turn over and cook the other side.

Add some fresh, ripe, blueberries or strawberries to the top along with some additional maple syrup.

Makes 16 3-inch pancakes.

These are absolutely my favorite pancakes.

Thanks. I really like millet. BTW. what brand do you use ? Mine has been tasting too strong lately. I was getting it from the bin. And then rinsing it before cooking it.

how would millet flour in the bag compare to the amount of millet ground from whole millet----hope that made sence? i have a bag of millet flour.

We don't know the brand name, we get ours from the bulk bin.

I believe ground millet and millet flour would be approximately the same measurement. Give it a try.

Not to change the topic, but have you tasted that millet bread available at health food stores ? I believe it is made in FL.

I was told that it was gluten free and that the local celiacs were eating it, so I tried it . :blink: Now the label warns about the wheat in it.

But, I loved the taste. Anyone have any recipe ideas for millet bread ?

I believe ground millet and millet flour would be approximately the same measurement. Give it a try.

I use Bob's Red Mill. Pls be cautious of foods in the bulk bins at stores. They are a prime spot for CC.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
