This is my new favorite sin. I made this today. Took a scoop of the cake, topped it with vanilla ice cream. Topped that with a few sprays of reddi-whip whipped cream and then added a marachino cherry (ok 3 marachino cherries) It was like HEAVEN!! This is my new favorite dessert. HOLEY COW!!

Hot Fudge Cake

1 C packed brown sugar

1 C Flour

¼ C plus 3 T unsweetened cocoa

¾ C packed brown sugar

2tsp baking powder

½ tsp salt

½ c milk

2T margarine or butter melted

½ tsp vanilla

1 ¾ c boiling water

Mix 1C brown sugar, flour, 3 T cocoa, baking powder, and salt together in a bowl. Stir in milk, melted margarine, and vanilla. Spread over the bottom of the Crock-Pot.

In another bowl, mix together ¾ c brown sugar and ¼ c cocoa. Sprinkle evenly over mixture in the crock-pot. Do NOT stir.

Pour in the boiling water. Do NOT stir. Cover and cook on high for 2-3 hours until a toothpick inserted comes out clean. Serve warm with ice cream or whipped topping.

(recipe is for use with a 3 ½ quart crock pot)

sounds great! Two questions: what kind of flour worked best? and what brand of cherries?

angel-jd1 Community Regular

For flour I just used what I had in the fridge. I had a little of Analise Roberts mix left (3/4c) and the rest was bob's red mill all purpose gluten-free flour (1/4 c). It turned out great.

Marachino cherries were Wal-mart Great Value brand. Label says gluten-free :)

Hope you enjoy it as much as I am

I have to confess, this was my 1st crock-pot baking experiment. I'm like you, I was like "what!! BAKE in a crock pot??!?!!!" I have been craving a ooey gooey chocolatey thing. This recipe sounded like what I had been dreaming of. Sooooo I tried it.

It couldn't have been much easier to make. I was so fascinated by it, I kept peeking through my glass lid seeing what it was doing. It rose like a regular cake. Made the house smell yummy. Under the cake part was this hot fudgey sauce stuff OMG!!

I liked this recipe because you didn't have to have the special baking pan for the crock pot. I don't have one of those. You could just use the regular stonewear part that comes with the pot.

I'm not sure if I would "bake" much else in the ol crock-pot. However, I do know that I will definately make this recipe again.

Mmm, really does sound delicious! I haven't had cake in so long! I had a thought while reading the recipe. There was an amazing recipe I found on an IBS site a few months back for individualized cakes. Basically just the same concept, only you cooked the cake in a mug. It was also cake mix with chocolate pudding. If anyone feels up to it, I'm sure we would all LOVE a gluten-free variation. Maybe I'll check back on the site....

Thx for the recipe :)

Here is a Hot Fudge Cake recipe that doesn't require a crockpot.

Hot Fudge Cake

1 cup rice flour

3/4 cup white sugar

5 Tbsp baking cocoa, divided in half

4 tsp gluten-free baking powder

1/4 tsp salt (Don't try this without the salt)

1/2 cup milk

2 Tbsp vegetable oil

1-2 tsp vanilla extract

1 cup packed brown sugar

1-3/4 cup hot water

In a medium bowl, combine flour, white sugar, 1/2 of the cocoa powder, and the salt. Stir in the milk, oil and vanilla until smooth. Spread in an ungreased 9-inch square baking pan. Combine brown sugar and the other half of the cocoa and sprinkle this over the top of the batter in the cake pan. Pour hot water over all and DO NOT stir. Bake at 350 degrees for 35 to 40 minutes. Serve warm.

Yield: 9 servings.

Cristiana, that sounds like a great approach and I will be looking forward to the results. I am in the same boat as you. I don't experience overt symptoms with minor, cross contamination level exposures so I sometimes will indulge in those "processed on equipment that also processes wheat . . ." or items that don't specifically claim to be gluten free but do not list gluten containing grains in their ingredient list. But I always wonder if I am still experiencing sub acute inflammatory reactions. I haven't had any celiac antibody blood work done since my diagnosis almost 25 years ago so I don't really have any data to go by.

I've been reflecting on this further. The lowest TTG I've ever managed was 4.5 (normal lab reading under 10).  Since then it has gone up to 10.   I am not happy with that.  I can only explain this by the fact that I am eating out more these days and that's where I'm being 'glutened', but such small amounts that I only occasionally react. I know some of it is also to do with eating products labelled 'may contain gluten' by mistake - which in the UK means it probably does! It stands to reason that as I am a coeliac any trace of gluten will cause a response in the gut.  My villi are healed and look healthy, but those lymphocytes are present because of the occasional trace amounts of gluten sneaking into my diet.   I am going to try not to eat out now until my next blood test in the autumn and read labels properly to avoid the may contain gluten products, and will then report back to see if it has helped!

Hi, I posted before about my son's legs shaking after gluten. I did end up starting him on vit b and happily he actually started sleeping better and longer.  Back to my 4 year old. She had gone back to meltdowns, early wakes, and exhaustion. We tested everything again and her ferritin was lowish again (16) and vit d was low. After a couple weeks on supplements she is cheerful, sleeping better and looks better. The red rimmed eyes and dark circles are much better.   AND her Ttg was a 3!!!!!! So, we are crushing the gluten-free diet which is great. But WHY are her iron and vit d low if she's not getting any gluten????  She's on 30mg of iron per day and also a multivitamin and vit d supplement (per her dr). That helped her feel better quickly. But will she need supplements her whole life?? Or is there some other reason she's not absorbing iron? We eat very healthy with minimal processed food. Beef maybe 1x per week but plenty of other protein including eggs daily.  She also says her tummy hurts every single morning. That was before the iron (do not likely a side effect). Is that common with celiac?

Celiac disease is the most likely cause, but here are articles about the other possible causes:
