Birthday Cake With So Many Restrictions Help!

I am in desperate need of a birthday cake recipe for my daugher. She is only 11 months old (birthday party early!) and has severe lactose intollerance (cannot even have plant based lactose), gluten & wheat intollerance and the usual no-no's for under 1 years old (no eggs, only egg substitute -- I have already used the powder sub no problem there--, no nuts, no chocolate). I am just looking for a simple cake recipe so she can enjoy her birthday with the rest of the kids! Any suggestions? Thanks in advance!

I don't have a recipe but I wanted to offer some help. We just made the yellow cake from Cause Your Special cake mixes and liked it. You can order them online. It is gluten/dairy free. I used coconut oil instead of butter and either rice or soy milk instead of milk. I did use real eggs but it says you can use an egg replacement. I used a package frosting mix which did not do well with my margarine so next time I will make frosting from scratch. These cupcakes were good even without frosting.

It doesnt always have to be cake...maybe think creative,

Fruit in a jello mold, pick her favorite fruits and favorite color jello.

An 11 month old doesnt care if its a "cake" just something fun to eat and they can use their hands with jello too :lol:

Just one idea...

Think like a baby - a peeled banana with Happy Birthday written on it with an acceptable icing (one that suits her food requirements)...would be a hit.

Birthdays for kids are supposed ot be enjoyable for mom too - make it easy and enjoy the squeals of delight

Thanks for the hints (unfortunately bananas are a complete no no as well...we're not sure if it's an allergy or not but it wasn't pretty!)! I'm going to look online for that mix.

The cake is more for pictures, I guess. She is our second and what we do for one we have to do for the other...we have great pics of our first at her first birthday eating cake and thought it would be fun to make the second her own special cake!

Sounds fun, hope its a splendid birthday bash.

We were forced to think of other options that are related to sensory issues etc with our daughter and then the diabetes with our son.

Happy birthday to your daughter, I can hear the cameras clicking now!

I never heard of the Cause your special cake mixes - that is so cool!

Check out your library or Amazon for special cookbooks. I have one called "Cooking Free" and it has all kinds of recipies for special diets.

I have a yummy recipe that is egg-free, dairy-free, gluten-free, soy-free and chocolate-free! It's really a brownie recipe, but I have used it for my, my mom's and my son's birthday cakes. You can substitute cocoa powder for the carob, but we like the carob the best. I double it for a 9 x 13 pan.

Carob Brownie Cake

1 C Br. Rice flour

1/8 tsp. xanthan gum

1 Tbs. Egg Replacer

1/2 C Carob Powder

1-1/2 tsp. Baking Powder

1/4 tsp. Salt

Sift all dry ingredients 2-3 times. Then add:

3/4 C Real Maple Syrup

1/3 C Oil (Melted coconut oil is great!)

1 tsp. Vanilla

Mix well and scrape into greased 9 x 9 pan. Bake at 375 for 18-20 minutes. For brownies, cool slightly, then cut into squares. For cake, cool and then frost.

      Though trying to diligently eat gluten free, recent bloodwork was bad so searching for culprits.  Eat lot of (preferably mixed) nuts.  Most allergen labels say may be processed on equpment that also processes wheat, etc.  Finally found ONE kind (unsalted mixed) at BJ's.  Wessley (their store brand) that did not contain that warning.  Says in large letters "A GLUTEN FREE FOOD."  Well, all nuts are a gluten free FOOD!  Have been eating and now wonder if this is intentionally decieving.  So stopped eating until find culprit.  Nuts are so good for protein and fiber (especially if trying to not eat meat).  'Tis so frustrating.  Thanks to above, I'll look into Tierra Farms.

      Despite being very diligent about eating gluten free, my recent bloodwork was bad.  So been on a mission to find the culprit(s).  During Covid my daughter found "certified gluten free" Yasso mint chocolate chip yogurt bars at Costco.  I was elated and have been eating them since.  When delving into possible culprits I discovered that the boxes with 12 bars at both Costco and BJ's no longer say "certified gluten free."  But the boxes with 4 bars at groceries and Target still say "certified gluten free."  Contacted the manufacturer and was told to go by what the box says.  So guess different machinery is used.  Was also told they were in the process of changing boxes.  Will be interesting to see what that brings.

      Before I could call them (after all my research), Costco Pharmacy called and told me they found a generic gluten-free levothyroxine.  Was told name is Amneal brand.  Said they called and company  confirmed is gluten free.  Only one I had found was Lannett so did more research and found:  “BRIDGEWATER, N.J., Nov. 12, 2018.  Amneal Pharmaceuticals, Inc. (NYSE: AMRX) today announced that it has completed a transition agreement with Lannett Company. Under the terms of the agreement, Amneal will take over the distribution and marketing of Levothyroxine sodium tablets from Lannett beginning December 1, 2018 through March 23, 2019, ahead of when the Company's previously announced 10-year Levothyroxine distribution agreement with Jerome Stevens begins on March 23, 2019.” So looks like we’re good until at least 6/23/29.  Active ingredients are colloidal silicon dioxide, lactose, magnesium stearate, CORN STARTCH, acacia, sodium startch glycolate. Bottom line:  We can tell our pharmacists we need gluten-free, generic Amneal brand Levothyroxine.   AMEN.

      Given your severe symptoms it sounds like you would be much better off going 100% gluten-free!
