Okay, for those of you that have this cookbook, give the Chicken Biscuit Surprise on pg. 134 a try. It is fabulous! I thought it looked kind of gross, but I decided to try it anyway and it's really good. I think this recipe would also do well with other shredded meats (tuna, crab, etc.). The little sandwiches make GREAT breakfast sandwiches. DH and picky DD both loved them. I used canned chicken and cheddar cheese and they were really easy to make like that.

Okay, this is a long one....

This recipe is from The Incredible Edible Gluten Free Food for Kids cookbook by Sheri L. Sanderson. I highly recommend getting this cookbook as all recipes that I've tried have turned out beautifully.

Chicken Biscuit Surprise

1 Buttermilk Biscuit Recipe

2 cups cooked shredded chicken (2 12.5 ounce cans, drained)

2 cups shredded cheese (cheddar or swiss, about 1/2 a lb.) - I used cheddar, yummy

1. Place one heaping tablespoon of the biscuit dough in the bottom of each of 18 well greased muffin cups. Drop 2 tablespoons of the shredded chicken on each biscuit. Layer each biscuit with 2 tablespoons of the cheese. Cover each biscuit with another heaping tablespoon of the biscuit dough.

2. Bake at 450 degrees for 15-17 minutes or until a toothpick inserted near the center of the biscuit comes out clean and the biscuits are golden.

3. Invert onto a cooling rack and serve immediately.

Buttermilk Biscuits

1.5 cups rice flour

1/3 cup potato starch flour

3 tablespoons tapioca flour

1 tablespoon baking powder

1/4 teaspoon baking soda

2 teaspoons sugar

2 teaspoons Cream of Tartar

1/4 teaspoon salt

1 teaspoon xantham gum

2.5 teaspoons powdered buttermilk

1/2 cup margarine or butter, softened

1/2 cup water

1 egg, beaten

1. In a bowl, combine rice flour, potato starch flour, tapioca flour, baking powder, baking soda, sugar, Cream of Tartar, salt, xantham gum, and powdered buttermilk.

2. Cut in the margarine with a pastry blender or an electric mixer on low. Make a well in the center and add the water and egg all at once.

3. Mix well until moistened and combined.

Then follow the Biscuit Surprise recipe above.

These reheat beautifully. They make great breakfast and lunch dishes. I made it last night for dinner and it was a huge hit. My husband even asked for seconds. Again, this cookbook is excellent and I would strongly recommend getting it. There are recipes for cookies, cakes, gluten free main dishes, side dishes, breakfasts. The buttermilk pancake recipe is to die for, especially with blueberries!!! They sell the book on amazon .com.

I'm definitely going to try it when I have some leftover chicken to use up!!

I'll bet my two boys wouldn't even try it because you've already noted that it looks gross. Looks gross=tastes gross at my house. <_<

I will admit that one time I made a beef stroganoff that looked NOTHING like the photo. The photo had creamy white sauce and mine was pink. I wouldn't even try it. I had a grilled cheese sandwich instead. I don't think my husband tried it either. :lol:

Oh, all right. Will put it on my to try list.

Mart - We love the banana bread and sloppy joes. My MIL made the sugar cookies and those were a big hit last Christmas. I use the dressing recipe for Potato salad as well. I didn't have much luck with the tortillas. I think they are called Mock Flour Tortillas or something. They turned out well, but we couldn't fold them. They just broke at the fold line. I ended up cutting them into triangles, "painting" Italian salad dressing on them and baking them until they were crisp for cracker type things. They were pretty good.

I have to say I cannot make a gluten banana bread to save my life, but this one is great EVERY time.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
