so i am going to make my own gluten-free bread mix i gota recipe book, but i dont know what brands i can trust to get the flours i need, i would go for bobs red mill but from what i have herd they are not a very trusty company i need

rice flour, potato starch flour, tapioca flout, bean flour and xanthan gum

I like Ener-g brand.

They make potato starch flour, tapioca flour, and rice flour.

The bean flour, I can't help you with--I don't use it (legume intolerant)

Lister, I make my own bread out of the same things. You can buy all of them in bulk at lifesource, I know were around the samish area, do you guys have one down there? If not I would check some of your health food stores for a bulk area, its cheaper to buy that way.

I prefer the flours at www.kinnikinnick.com. They're relatively inexpensive and the shipping is set at $10 flat rate. Plus, I don't think there's any chance for cc with them.

i use Ener-g, Bob's and Nu-World Amaranth.

i do NOT recommend bulk flours. the same scoops/carelessness + flour in the air will definitely result in cross-contamination. i have seen employees using the same cloth to wipe each one.

it's not worth the risk to save a few bucks.

I agree with the cc risk of buying in bulk just anywhere. This particular store I recommended lister to is a very allergy friendly store, as far as I have seen the bulk area is extremely clean, scoops slide into the plastic bins they aren't just hanging on the side. Still the risk is always there, yes. On another note the employees there are very knowledgeable of their gluten free products. I had an employee print me out 7 pages of gluten free items in the store, I thought that was very helpful.

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
