Looking For Tried And True Banana Bread Recipe

i know there have already been alot of posts for this recipe, but i thought i'd add another one :) it's so easy and no one in my [non gluten-free] family/friends could even tell it was gluten-free. it's delicious and the reason i use this one is because it has really simple ingredients (ie: no xanthan gum or tons of diff. gluten-free flours). it does have a stick of butter in it, so i don't know if you can sub that for your dairy free version?? anyway, here it is:

1 stick butter or margerine, softened

3 large, very ripe bananas (mashed)

2 C rice flour

1 C sugar

2 eggs

2 Tbs baking powder

1 T vanilla

Cream butter with sugar in large bowl. Beat in eggs, vanilla and bananas. Mix in flour & baking powder. Turn into 9 x 5 loaf pan (i spray mine). Bake at 325 for one hour and 20 minutes. I go until it gets brown on the top.

tastes great right out of the oven, cold from the fridge (wierd maybe but i love it that way :) ), toasted...its fabulous. good luck!

Happygirl, I just wanted to say thank you for this amazing recipe! I had 3 ugly bananas on hand and was unhappy with the recipe I'd been using, so I searched here for "banana bread" and then tried yours -- it was even better than the gluten version I loved before! My husband and I ate it up in under 2 days! :blink::P

Sorry it took me so long to get this to you. It is adapted from my mom's "normal" banana bread recipe (everything in our house is pretty much "adapted")

Banana Bread

2 tsp vanilla

3/4 c sugar

1 1/2 mashed bananas (very ripe, 3-4 bananas)

3/4 c veg. oil

2 eggs, beaten with a fork

2 c "flour" of choice

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp xanthan gum *can vary thsi depending on results

1/2 c chopped nuts----optional

In a large bowl, mix eggs, banans, oil, vanilla, and sugar. Stir in dry ingredients. Grease mini loaf pans and fill 2/3. Makes 2-3. (Actually, its probably about 3 and one muffin).

Bake 35-40 min.

Cool in pan only a few minutes. Remove from pan and cool completely before slicing.

Note: Bananas can be mashed and mesaured into ziplock bags and frozen. Or, freeze whole in peel and thaw in microwave.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
