Pie Crust

Makes one bottom crust for pumpkin pie.

1 1/2 cups rice flour (I use brown rice flour)

1 teaspoon salt

1/2 cup vegetable oil (I use corn oil)

2 tablespoons cold milk

1 1/2 teaspoons granulated sugar

Mix all ingredients together.

Press into pie pan with hands. Make as thin a layer as you can.

Don't worry if you can't get it spread all the way up sides of pie plate, it cooks up well and cuts and serves well either way.

Then pour pie filling over crust and put pie in oven to bake, no need to pre-bake crust when making pumpkin pie.

Best wishes to all!

Then what? Do you pre-bake the crust, or just fill & bake?

Oops! Thanks!

Do not pre-bake crust for pumpkin pie, I edited and added this above just now, thanks!

I should post the pumpkin pie filling recipe with this too, wish I had've, can't edit and change 'new post' titles or subtitles on this site, can only edit message part!

Best wishes to all!

Thank you for this! I've been wanting a crust recipe that I could just pat into the plate, instead of rolling. :)

Yes! It's nice not having to roll pie crust out, so fast and easy! And it tastes great!

Best wishes!

I put on over 12kg by eating protein with every meal, 3 to 5 times a day. Eggs, Chicken, Tuna, Turkey etc. I stay away from too much red meat as it can be inflammatory. Scott is correct. I've come across a bunch of Coeliac PT's on Tiktok and Instagram. They all say the same thing, the key is getting enough protein and consistency.

It's great to hear that eliminating gluten has helped alleviate symptoms like eye burning, which is a significant and positive change. The first and most important step is to ensure you're consuming enough protein throughout the day to support muscle repair and growth, which can be challenging with a busy schedule. Since you're already physically active at work, adding focused strength training just 2-3 times per week can make a major difference. Bodyweight exercises like squats, push-ups (modified if needed), and lunges, or using resistance bands at home, are excellent, efficient places to start. Remember, consistency with these short sessions and prioritizing post-workout recovery, including good sleep and hydration, are just as crucial as the workouts themselves. It's a smart, gradual process at any age.

Trader Joe's carries a good variety of affordable gluten-free foods like bagels, hamburger buns, pasta, etc. I like Franz Gluten Free bread, which is available at my local Costco. Food For Life and Little Northern Bakehouse (advertisers here) also make excellent gluten-free breads. Costco also sells gluten-free pizzas, crackers, gravy, etc.
