Baking Bread Without Sugar?

Hi all,

I am looking for a bread recipe that meets the following requirements:

- Gluten-free (obviously)

- No cane sugar, preferably no sweeteners at all but I'd be okay with a little agave nectar or something

- Preferably mostly whole grain

- Can be made without a bread machine

Does anyone have a recipe that meets these requirements? Many people have told me a yeast-based bread can't be made without sugar... But I don't believe this is true, I am pretty sure yeast can be activated by the carbs in the flour itself it just takes longer.

I am really craving some bread but I'm not eating sugar (or honey or maple syrup) right now for blood sugar reasons - Any recipes or suggestions would be much appreciated!

Its really irrelevant if you think about it because the starter sugar is consumed by the yeast... and regardless of the type of carbs it starts off with it has to break it down into sugars anyway... so you can bypass adding sugar but the yeast will break down the starches into sugars to digest them anyway..(it will just take longer).so if your concerned about the actual amount of carb's in total it really doesn't make any difference until your are adding sugar that won't be consumed by the yeast...(i.e making a sweetened bread)

That can be agave nectar if you want but the yeast see's it all the same as a mix of sugars and stuff which is useless for it.

you could make a yeast -free loaf, but i second what gfp says.

Is there that much difference between agave nectar and honey/maple syrup?

      Occasionally eating out in restaurants means that there is potential cross contamination in spite of ordering a gluten free dish. What enzyme supplements can the forum recommend that would help with potential cross contamination? Something I could take before I start eating. I used to order Wheat Rescue from Microbiome lab, but it is not available anymore.

      Hi  - Anyone have any experience with these? I bought them at Costco thinking they must be gluten-free, but now I see Natural Flavors and Spice in the ingredients. There's no Gluten Free labeling. However the Costco site and two other sites say it's gluten free. Anyone know?

      Yes, I doubt you can find a perfectly safe restaurant--perhaps a dedicated gluten-free restaurant, but in general, very few of them exist, and they tend to be in larger cities. Super sensitive celiacs should probably just avoid eating out.
