Quick And Easy gluten-free Meals

Help am out of ideas! :o

Lately I have been getting really bored of the usual dishes I eat and I would be so grateful if anyone has some quick and easy gluten free and dairy free meal ideas and recipes.

Viola 1 Rookie

Ham Chowder;

Dice pre-cooked old fashioned ham

Put into a pot half full of water, add one or two bay leaves.

Simmer while you peel and dice potatoes

Remove bay leaves, add potatoes

Add finely chopped onions and dried parsley and ground pepper (do not add salt!)

Just before you serve add a mixture of potato four and water to thicken the chowder (can use milk if you are not dairy free)

Serve with a warmed gluten free bun

Also www.glutenfreeda.com is offering a 90 day free subscription. They are an oline gluten free recipe site. They have 30 minute meals. Plus tons of other recipes. Not sure if that link will work, first time I have tried to hyperlink anything.

Just tonight I fixed a meal my husband and I both liked a lot...

Seasoned chicken nuggets:

chicken breasts, deboned, cut into 1" pieces

fried in a small amount of oil until cooked and browned.

sprinkle with a seasoned salt - I made my own (salt, pepper, paprika, parsley, oregano)

I added a little water under the chicken and stirred to moisten the seasoning and kept it hot on a low burner.

green beanswith sundried tomatoes and red bell peppers

I moistened a few sundried tomatoes and then cut in small pieces. Added these and a few large pieces of red bell pepper to the pan of frozen green beans and let them cook along with the beans. When done I cut the bell peppers into smaller pieces, and added a little salt and olive oil.

gluten-free biscuits

Sorry, no recipe - I sort of made it up - but they were good so will have to figure out the measurements next time.

One of my all-time favorites is "Diet Coke Chicken."

I don't really have a recipe... I just toss a bunch of stuff in the crockpot and simmer all day.

Basically:

Chicken. (I use boneless skinless breasts, but you could use whatever you want)

Then I mix up some BBQ sauce (gluten-free of course) with some ketchup, and add some diet coke - and mix it up well, to taste.

The diet coke tenderizes the heck out of the chicken.

I shred it a few hours in...and then let the shreds soak up the sauce.

When it's time for dinner, I serve on gluten free rolls, along with corn and fries. My family loves this!

Check out allrecipes.com. They have everyday meals and then it breaks them down into the time it takes to prepare them. They have a ton of 30 minute meals. Just browse through and click on ones that you think might be gluten free. Most are already gluten free, and if they're not they can be easily adapted. Allrecipes.com has literally saved my dinner many, many times. I love that site.

Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

      Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
