Bread Machine Recipes? Dairy Free/gluten Free Sour Cream?

I am wondering if anyone has a good bread machine recipe they would recommend. I am looking for a basic recipe for my 31/2 year old for sandwiches, etc. There are SO many out there I thought I would check with you all before making a bunch of bad gluten free bread!

Also, I am looking for a gluten free/dairy free sour cream substitute. Any recommendations? I have been using Tofutti's Sour supreme but they can't say they are 100% gluten free so I am unsure about it.

Seems to me it shouldn't be too difficult to make a kind of sour cream like thing. Like whipping some combination of tapioca/sweet white rice/soy flours and/or rice/soy milk with some guar gum. Then a little something for the sour taste like lemon juice, vinegar, or maybe cream of tartar. Or use one of those yogurt cultures to curdle it, which would impart that sort of taste I think.

toffutti's is what we use. And it has been on a ton of Gluten-free Casein-free lists that I've seen. I'd say if you eat it and don't react to it, you are probably safe to eat it more. It is made of soy and sometimes if you are sensitive to dairy you may also be sensitive to soy.

As far as the bread goes. We use the kinnicknick brand, but I'm not sure if it is dairy free??? Otherwise the energy bread......but I haven't yet switched myself over to gluten-free bread. I've been told it is an aquired taste. I made a ton of bread recipes and they all came out tasting horrible so I'd rather buy premade.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
