Wonderful gluten-free Brownies

Hi everyone,

I know it's been awhile; I've been taking care of my infant son. B)

The other day I tried Carol Fenster's recipe for chocolate brownies. Oh my goodness, they were soooo good! :P I know I'm not the only fan of her cookbooks on this site. Has anyone else tried these?

I've purchased brownies from Ener-G, Kinnick, and Bob's Red Mill, but I missed that "real" brownie consistency.

I'll be glad to post the recipe if anyone is interested. I would also like to hear if anyone else has made these and what they thought of them.

Blessings. -Julie

Yes please do share. I made gluten-free brownies...and they were dry and crumbly. :(

Sure, I'll be glad to post it! I LOVE a good brownie too. I've found with celiac disease, it's often difficult to find one that tastes like the old fashioned chewy ones that "mama used to make." (These are especially yummy hot out of the oven) :D

Carol Fenster's Chocolate Brownies recipe from her book Special Diet Solutions; pg. 115

t= teaspoon

1/2 C Brown rice flour or garbanzo/fava flour

1/4 C Potato Starch

1/4 C Tapioca flour

2/3 C Cocoa (unsweetened...like Nestle cocoa for instance)

1/2 t Baking powder

1/2 t Salt

1/2 t xanthum gum

1/3 C Melted butter, Margarine, Spectrum or Vegatable oil

1/2 C brown sugar, packed

1/2 C Sugar

1 large egg

2 t vanilla extract

1/3 C hot water or coffee

1/4 C Chopped walnuts (optional)

Directions:

Preheat oven to 350. Grease 8 in. square pan or 11x7 pan

Stir together (flour through xan. gum) and set aside.

In separate bowl, beat butter through vanilla extract.

Slowly add dry ingredients, hot water, and nuts (if desired)

Bake 20 minutes.

How I did it/ What I used:

I used 8 inch square glass pan

I preheated oven to 325 not 350

I used hot water (not coffee)

I added nuts

I used corn starch (didn't have potato starch on hand)

I used brown rice flour

I used butter not oil

I hand beat my "wet" ingredients- although the recipe suggests a mixer for wet ingredients

My brownies took a little longer than 20 minutes to bake, but the middle was soft and the top wasn't crispy and they definitely weren't dry and crumbly! B)

Hope you enjoy! -Julie

Thanks Julie, I'll have to try them. I've been trying to figure out what to bake. Wendy

The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
