Okay, I found this recipe on allrecipes.com and tried it last night. It's REALLY good. It was originally posted by Kathy Teela and called Skillet Corn Bread. I added a few tablespoons of sugar to mine because we like sweet corn bread. It turned out far better than I could have hoped for and it only took a few minutes to make.

INGREDIENTS

* 1/4 cup all-purpose flour (I used a white rice flour, potato starch, tapioca starch mix plus 1 teaspoon xantham gum)

* 1/4 cup cornmeal

* 1/2 teaspoon baking powder

* 1/4 teaspoon salt

* 1 egg

* 1/4 cup milk

* 4 teaspoons vegetable oil, divided

DIRECTIONS

1. In a bowl, combine the flour, cornmeal, baking powder and salt. In another bowl, beat the egg, milk and 3 teaspoons oil; stir into dry ingredients just until moistened. Heat remaining oil in a heavy 8-in. skillet over low heat. Pour batter into the hot skillet; cover and cook for 4-5 minutes. Turn and cook 4 minutes longer or until golden brown.

did anyone's results fall apart into crumbs? what did I do wrong? not enough gum?

I would say not enough gum OR perhaps overcooking? Mine turned out moist and almost fluffy for cornbread. Very tasty. How much of which gum did you use?

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing

      More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
