I recently attended a gluten free cooking class by Annalise G. Roberts. She has written the best baking cookbook I have found. It is called Gluten Free Baking Classics. Dr. Peter Green is a friend of hers and has written a forward in the book. I have tried the submarine roll, sandwich bread and french bread recipes all with wonderful results.

I tried the submarine bread twice and it was a disaster. <_<

I emailed Annalise from the Food Philosopher website and she gave me some hints, so I guess I'll have to try it again. Everyone raves about it. I need to find a recipe for hamburger buns that my son will actually eat. I bought Kinnikinnick hamburger buns $6 for 4 and he ate one. I could hardly stand the smell of them. (or should I say stench? :ph34r: Am I the only one?)

I think jmunchkin has had good success with Annalise's bread as well.

I had great results with the submarine sandwich bread, too.

I used the French bread pans she suggested, and I spray them with Pam and then dust them with corn meal (not corn starch).

I also preheat my oven for 2 minutes, turn it off, and let the bread rise in the oven (in the french bread pan put on top of a cookie sheet to catch drips).

I heat the water to the temp she suggests, too.

Make sure you are not using quick-rise yeast or bread machine yeast--they make the bread rise too quickly and then you end up with a mess.

And lastly, in bread baking, ya gotta measure EXACTLY, or it doesn't work.

Her sandwich bread is really good; it turns out way better if you bake it in a glass pan rather than metal. For some reason, all gluten-free breads do, but I don't know why.

Her cookbook is my most favorite one! I made her carrot cake as my wedding cake last year and just this past weekend, made her shortbread cookies. They are AWESOME!!!!

      This is a very common question, and the most important thing to know is that no, Guinness is not considered safe for individuals with coeliac disease. While it's fascinating to hear anecdotes from other coeliacs who can drink it without immediate issues, this is a risky exception rather than the rule. The core issue is that Guinness is brewed from barley, which contains gluten, and the standard brewing process does not remove the gluten protein to a level safe for coeliacs (below 20ppm). For someone like you who experiences dermatitis herpetiformis, the reaction is particularly significant. DH is triggered by gluten ingestion, even without immediate gastrointestinal symptoms. So, while you may not feel an instant stomach upset, drinking a gluten-containing beer like Guinness could very well provoke a flare-up of your skin condition days later. It would be a gamble with a potentially uncomfortable and long-lasting consequence. Fortunately, there are excellent, certified gluten-free stouts available now that can provide a safe and satisfying alternative without the risk.

      Before being diagnosed coeliac I used to love Guinness. Being made from barley it should be something a coeliac shouldn’t drink. But taking to another coeliac and they can drink it with no ill effects and have heard of others who can drink it too.  is this everyone’s experience?  Can I drink it?  I get dermatitis herpetiformis and don’t get instant reactions to gluten so can’t try it to see for myself.

      NCGS does not cause damage to the small bowel villi so, if indeed you were not skimping on gluten when you had the antibody blood testing done, it is likely you have celiac disease.

      I will assume you did the gluten challenge properly and were eating a lot of gluten daily for 6-8 weeks before your test, but if not, that could be the issue. If your symptoms go away on a gluten-free diet it would likely signal NCGS.
