I Have gluten-free Cake In My Kitchen...

Before I went gluten-free, I couldn't have cared less about chocolate cake. Didn't like it. At all. Brownies either. Too much cakey chocolate going on. Add in chocolate frosting? OMG. Gross... I'd eat it to be polite if someone gave it to me, but that's it.

My best friend's son's birthday party is tomorrow and he's having chocolate cake with chocolate frosting.

I thought - Yea, not a problem. I'm a gluten-free pro.

I even bought a couple of half-size bunt pans so I can take a cake for me and the kids, and then wrap one up for the freezer. Because I don't want to waste it. Because I don't like chocolate cake. (Priss, priss.)

I baked them a couple hours ago and it's all I can do NOT to dive face-first into one (okay, both) of them.

They smell so freaking good I can hardly stand another minute of it. My daughter doesn't like cake and my son will probably only eat a few bites. So my plan is to bring extra frosting.

Anyone else have food that they never liked before that now they'd hide from their children in order to eat the whole thing?

Or is it just me? Which would be fine.

Cuz that means more cake for me.

:D

Nancy

I have noticed something similar with nuts. I couldn't stand the taste of most of them. Peanut butter I LIVED off of, but tree nuts...ugh! Now however, I actually like tree nuts. Not like peanuts mind you, but still I can eat them, and I really like making nut milk with them, especially for use in milk shakes and smoothies.

Chocolate I never cared for, and something all chocolate like cake and frosting, or chocolate ice cream I still think is distasteful. Thing is, I don't want any so haven't tried, so I guess I really don't know if I'd like it. I do use carob for certain things, and that's fine in small amounts, so it's just like the way I'd use chocolate. Cookies, ice cream, etc with chocolate chips is ok, and I do like mint chocolate chips, but again in reasonably amounts, otherwise it's just overpowering IMO.

Yes, isn't this funny, strange? I feel the same way. I NEVER ate salad that was dressed, especially in a restaurant because the drown their salads. Would you like a little lettuce with that dressing? I always had the dressing on the side and put on sparingly. I ordered and ate and a whole dressed salad in a restaurant a few weeks ago. I couldn't believe what I was doing! My tolerance for certain things has increased. I think it's partly a blood sugar thing with me.

I am laughing so hard! Pre-celiac disease I couldn't give a hoot about chocolate...chips...m&m's and ice cream...now...LOOK OUT! It just comes over me...and I NEED it all!! Of course I have learning to modify slightly....I needed to drop the 20lb that came on as quick as the cravings...but...they are regular items in my pantry. No...you are not alone!

This is so funny--and yes--almonds! :D

I never cared for them, especially the way the raw ones felt in my mouth. I avoided anything with almond flavoring--too strong!

Now I slather almond butter over everything--and have been known to eat it right off the spoon. And almond milk--love the stuff  It makes the best pancakes, pudding and cocoa.

Of all things, I never thought I'd crave almonds!

Slightly off topic........but I made the Kinnickkinnick chocolate cake....sliced it lengthwise...put gluten-free vanilla ice cream between the warmed up slice of cake and drizzled(more like dumped!!) Smucker's hot fudge over the top.........OMG, I thought I was back at Shoney's having a hot fudge cake!! I am fighting NOT to eat it right now!!

One thing which shouldn't be overlooked is nutrient deficiencies. Chocolate has a fair amount of magnesium, as well as potassium and other things. Almonds do also, and it is common for Celiacs to have a magnesium deficiency. Seems to me if a craving is because of deficiency, it would be for something the body is familiar with, not necessarily the best source.

Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.

Your post demonstrates the profound frustration and isolation that so many in the Celiac community feel, and I want to thank you for channeling that experience into advocacy. The medical gaslighting you endured for decades is an unacceptable and, sadly, a common story, and the fact that you now have to "school" your own GI specialist speaks volumes about the critical lack of consistent and updated education. Your idea to make Celiac Disease a reportable condition to public health authorities is a compelling and strategic one. This single action would force the system to formally acknowledge the prevalence and seriousness of the disease, creating a concrete dataset that could drive better research funding, shape medical school curricula, and validate the patient experience in a way that individual stories alone often cannot. It is an uphill battle, but contacting representatives, as you have done with Adam Gray, is exactly how change begins. By framing it as a public health necessity—a matter of patient safety and protection from misdiagnosis and neglect—you are building a powerful case. Your voice and your perseverance, forged through thirty years of struggle, are exactly what this community needs to ensure that no one else has to fight so hard just to be believed and properly cared for.

I had no idea there is a "Louisville" in Colorado!😉 I thought it was a typo because I always think of the Kentucky city--but good luck!
