Living Without Cookie Recipe

Did anyone else try the Florentine cookie recipe that was in the latest issue of Living WIthout? I tried making them last SUnday and it was a total flop! I expected them to be thin, but they did not even maintain their form when I removed them from the cookie sheet. They just kinda rolled up. I ended up with a plateful of moist crumbly mixture which we did try to eat. :(

I was so curious about these cookies that I downloaded the recipe and intend making them

maybe this week end, just to see how the turn out ? This recipe is not unlike one of mine,

for jam centred nutty shortbread cookies.

Hi... I was looking for that recipe for my daughter since she has a big recital coming up Sun. and I wanted a special dessert for her. I am not going to try it now. I am going to make something I know she loves and is a reliable favorite... Bob's Red mill choc cake cupcakes. from the mix. I put applesauce in one time instead of butter and it was delicious. .. Thanks for the warning. Maybe I will try that recipe another time but this wkend I don't want to fool around and waste time. Thanks Mary

Let me know if you have any other favorite recipes for cookies that don't include butter since she is lactose intolerant. A friend is supposed to be getting me a nondairy choc mousse recipe. I can't wait.

      Thanks, I do include chia seeds and ground flax seed in my diet to help as well but on days that I'm not close to my target of 30 grams of fiber, I would add the Benefiber. My IBS-C was much better with both natural foods and the supplement so I will continue to search for another natural supplement that is not based on wheat to have when needed. Thanks

      Welcome @Trish G to the forum. Hard or lumpy stools and infrequent bowel movements.  My brother likes Phillips Stool Softener, Ducolate Sodium.   Just a question. Was the benefiber helping?

      I think you may be correct. The way the results are printed makes it appear as though it’s the ttg iga but I think you’re right—the 646 is total iga. So this would be indicative of another issue (another autoimmune condition, infection, cancer, etc.) and my doctor would need to do further testing. Thank you for saying this!

      Are you sure that is the TTG IgA? Based on the units (mg/dL) and having an upper limit to the normal range, it looks like a total IgA result.

      I am wondering if there are any vegetarians or vegans on this forum. I’ve been vegan for 15+ years and am just finding out I likely have celiac disease (blood panel done, need biopsy). My favorite foods—outside of vegetables, fruits, nuts, seeds—I will likely have to give up. Anyone else?
