Okay my old beer bread recipe is:

3 C flour

1 C sugar

1 can beer

throw it altogether and bake at 375 for 45-60 min...turned out great...not good for you but great :D

So do you think I should add xanthan gum???? Use my bette's featherlite mix??? Any ideas?

Dip:

1 C sour cream

1 C real mayo

6 tbl sp bacon peices

shreddded cheese to taste

garlic, spices to taste

From the new cookbook "Bon Appetit - Without the Wheat" by Julie Ambrose... a recipe for Cinnamon Raisin Beer Bread!

3 c gluten-free flour

3 tsp xanthan gum

1 c granulated sugar

1/4 c brown sugar

2 tsp cinnamon

3 tsp gluten-free baking powder

1 1/2 tsp salt

1 tsp gluten-free vanilla

1 c raisins

12 oz. bottle gluten-free beer

Preheat oven to 350. In a medium mixing bowl, combine the gluten-free flour, xan gum, granulated sugar, brown sugar, cinnamon, baking powder and salt. Make a well in the center and slowly pour in the gluten-free beer and vanilla. Stir until just combined. Fold in the raisins. Pour into an ungreased 8" loaf pan. Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Cool before serving.

If you would like a plainer bread- omit the cinnamon, vanilla and raisins.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
