Low Fat, High Carb, Gluten Free/dairy Free Recipes Preferrably For Christmas

Ever since going gluten free, it's been a BIG pain finding good things to carb-up on (a training thing. One day of very low fat, high carbs). At first I thought it was easy, but this time I actually read the labels and found out most everything I was eating was pretty fatty.

The only thing I could find this week was pancakes, cereal, and pasta. All of which were kind of boring, and the pasta was definitely not my bag.

My next carb-up happens to fall on Christmas and I'd greatly appreciate it if you all share some low fat treats.

BTW how do you use that search function? I do the "search item site:www.glutenfreeforum.com" thing, but the results are always very poor. Is that just what I have to deal with?

grains, legumes, starchy vegetables are all higher in carbohydrates and fat free or almost fat free.

It's best to avoid fiber and fructose as much as you can during a carb-load.

Last night I did a lot of searching on the net and decided to go with a Mexican Christmas. Lots of rice, corn tortillas, quinoa (hope it doesn't have too much fiber), and sugary stuff.

White rice has less fiber than brown rice.

Quinoa I believe has quite a bit of fiber, as well as some protein. If it's ok, there is a quinoa/corn blend pasta that is really tasty imo.

What about potatoes?

Potatoes are fine, it's just that I was starting to get really into my carb ups and all. All those tasty little pastries I was discovering are now a thing of the past, and sadly can never be eaten again. Now I'm stuck with oats, potatoes, corn, and other less elaborate things.

Thanks for that link by the way. I'll be sure to look all over that forum for some ideas. So far it looks like they haven't had much more than what I found so far. :(

.... Oh well, at least I have my bacon. :D

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
