I am going to try Pamela's (chocolate cake mix) and I was wondering if any of you lovely people have a recipe for some sort of gluten free dairy & soy free frosting or maybe a ganache recipe?

Happy Birthday! I love the Pamela's mix. It is so rich you don't need much for frosting. I've dusted the cake with powdered sugar and that's been enough! Is Cool Whip okay? That would be good. If that's not okay, I know I've seen soy based Cool Whip but I can't remember the name of it!

Huh. I never made a ganache before, but when I read your post I thought the filling to a cookie I made would probably be good. I looked up what a ganache is, and lo & behold, that's pretty much what my filling was. The site I checked for ganache said the basic recipe is 1 part cream to 2 parts chocolate, so you may have to tweak it a bit if no one else has a recipe.

Here's my recipe -

1 c. Enjoy Life chocolate chips

3/8 c. coconut milk

2 Tbsp powdered sugar

Cook & stir over medium heat until chocolate melts. (It will likely spread well while it's warm, but will firm up more as it cools.)

That's the only mix I buy, I've made it a few different ways, but the best BY FAR is the mocha version on the package. I made it with very strong coffee. It didn't taste at all like coffee, just very dark and rich. My chocolate-hater husband LOVED it and fought my DD for the last piece!!! :D

Well I'm sorry I read this so late, however I hope you had a great B-day. I have several cake recipes without always having to buy special mixes or flours. Having been diagnosed in 1994 b4 all of the really easy good stuff came along and because I love to cook, I have acquired many fixes for things. Should you still want some of these let me know I'd be happy to share. Also if you know of a Wholefoods, check them out they have a new bakery and although sometimes pricey the baked goods are fabulous.

That mocha sounds YUM I love love coffee and espresso and I think I will try that!

I can't wait to do some experimenting with this and I can't wait to finally try the cake mix itself I have heard so many good things about it.

I made the GFPantry chocolate chip cake once and it was really really good with strawberry compote on top. I'll be making a Bob's red Mill mix soon, and will keep you all updated.

I don't personally like the Bob's chocolate cake or chocolate chip cookies, they have that weird aftertaste. Maybe I need to experiment with different additives (like the coffee) because I bought a case of each and need to figure out a way to use them!! (I do LOVE their cornbread though!!)

Happy Belated Birthday :)

I always make Pamelas Chocolate Cake for birthdays, even for my gluten eating family members and they LOVE it.

I don't have a specific recipe on hand, but I know you can make a cf frosting with cocoa powder, oil (like canola or safflower), and powdered sugar. You can do a google search for vegan chocolate frosting.

I haven't tried any except "cause your special" brand cake mixes....

my MIL made a few for my anniversary party and everyone loved it, many were shocked to see me eating it and were scared I would get sick.... then when I told them it was gluten free the look on their face was classic!

and their brownie mix is to die for..... hubby never wants the other kind (with that nasty flour stuff) ever again, lol

Hi,

My birthday was on the 13th but I was too exhausted to make anything. Yesterday I found a recipe I will be attached to for loooong time. The Company is called 123 Gluten Free because all the mixes have only three steps to them. I made a yellow cake that I finally had to tell my family to hide because it was so good. If you can get it I would try it.

I didn't like the chocolate chip cookies so much either. They have a wonderful texture but the flavor is wonky. I did make the choc cake finally, and I enjoyed the flavor of that much more. I still noticed a bitter aftertaste, my mother and boyfriend and uncle all said I was crazy. It may have helped that I made a cream cheese/marshmallow creme frosting to go on top. I think the cake would be even better with a coffee flavor, or orange flavor, or chocolate chips.

I've perfected my apple crisp/cobbler if anyone's interested......

my favorite chocolate icing recipe

1 stick butter or marjorine

1/2 cup Hershey's cocoa spooned into the cup

1 t vanilla

1 box of powdered sugar

cream the butter until really fluffy, beat in the cocoa and vanilla. Add part of the sugar (sift if it's old). As the icing gets thicker, add milk to keep it the right consistancy. Keep adding milk (maybe a T at a time) and the sugar until you have icing the consistancy you want. This will make enough to ice a 2 layer cake, or put a really thick layer on a sheet cake. REduce by about 1/3 if you want less icing on your sheet cake. (Like, who wants less icing?)

I don't think you can make dairy free ganache--you boil cream and chocolate together, so I can't imagine what you could substitute for the cream.

      What are your daily meals? Guilty pleasure snacks? Protein bars? I feel when looking for gluten free foods they are filled with sugar cholesterol. Looking for healthy gluten-free protein bars. Something to fill since sometimes I feel like not to eat anything. Especially if on vacation and unsure of cross contamination I figure go with a salad and protein bar to fill and play it safe.

      Unfortunately, there is presently no test for NCGS. Celiac disease must first be ruled out. NCGS is thought to be much more common than celiac disease. We know that celiac disease is an autoimmune disorder but the mechanism of NCGS is less clear. Both call for an elimination of gluten from the diet.

      Thanks for your reply Trents…most appreciated.  I am unfamiliar with celiac labs terminology so I wanted to know if the presence of HLA variants (DA:101, DA:105, DQB1:0301 and DQB1:0501) that the labs detected had any merit in predisposing one to be more sensitive to gluten/carbs than the general population?  Also,  I found what you said about NCGS very interesting and I appreciate you mentioning that.  I’ve worked hard to research and advocate for myself with my Hematologist and now with a new GI, since my bowel surgery and to maintain my Vitamin B12 health concurrent with keeping my levels of Iron in the optimal range. I’ve been tested for SIBO (do not have it), biopsy showed negative for HPylori, and have had Fecal studies done (nothing showed up) and I understand how a loss of a large amount of bowel could be highly impacting re: SIBO, malabsorption and motility issues. So I’ve managed pretty well diet and elimination-wise until just recently. That said, this new problem with extreme bloating, distention and upper girth, NAFLD just occured over the last 4 months so it is new for me and I thought celiac might be a possible issue. I’ll probably just continue on in this less gluten/carbs seem to be better for me and see how reintroducing certain foods go.  Thanks again.

      Thanks bumped it up and now take all 3 vitamins 2 capsules each with the super b complex at breakfast. I will give it some time to see if I notice a difference. I am going to track my eating daily diary on a myfitness pal app to see if the "claimed" gluten free foods bother me or not.

      Please can anyone help. I was diagnosed on 23rd December and I am trying my best to get my head around all the things to look out for. I have read that yeast extract is not to be eaten by coeliacs. Why? And is this all yeast extract. Or is this information wrong. Thanks.
