Spicy Tequila Lime Shrimp with Polenta Rounds

Bored and coming up with recipes HAHAHA;)

The polenta is 'tamale' inspired...

2 pounds fresh uncooked prawns

2 ts salt

1/4 cup lime juice

1/4 cup good quality tequila (I prefer El Tesoro)

1 while onion sliced halved and sliced thin

1 sweet red bellpepper seeded and julienned approx 1/4" thin

2 garlic cloves, minced

1/2 ts pasilla chile powder (or chipotle if you prefer)

1/4 cup chopped cilantro

2 tb oil or butter

1 tube plain San Gennaro precooked polenta. (or cook your own following basic plain polenta recipe)

Marinade peeled shrimp, bellpepper and onion in large mixing bowl with lime juice, tequila, salt, minced garlic, and chopped cilantro, and chile powder. Toss together until well blended. Set in fridge to marinade for 1 hour.

Preheat 12" skillet and put in oil or butter, and add shrimp, bellpeppers and onion and remaining lime|tequila marinade from the bowl. Cook until shrimp are pink and opaque and veggies are soft, and serve over hot polenta in big pasta bowls or dinner plate drizzling remaining juices over the top.

You can top with chedder or queso blanco if you can have cheese. Or Vegan cheese if you choose.

When we were in Chicago, I bought a 4 tube fluorescent fixture and hung it over a table so I could grow fresh herbs.

YOu could buy them in the store in Chicago during the winter but they were frozen by the time I got home <G>
