dont feel too bad, its rough work walking back and forth across 8 football fields while gorging on safe cheese, rice things, hundres of wines and sake etc. :D

They make a wide variety of gluten-free crackers, flour and tempura batter mix!

Its all based on the cassava (Manihot esculenta) Open Original Shared Link

I've tried all the different gluten-free crackers at health food stores in hawaii and these are far better.

Valentina Espinosa is the company president and said she would send me a list of where they are available as there are a few places in North America that have them.

How lucky can you get!!!! I've been trying to get this Italian Co. to the US so we can buy !!!! I am in great need of a box of acini di pepe gluten free for my famous wedding soup!!!!!I haven't had it in five years!!!!! Of course if one was able to get these products in the US I'd buy like crazy..... I hear they are the "real deal" so to speak.

Did you try any yet?

There is another company from Italy that has wonderful crackers but I can't get them here either........

They gave me some to bring home but i've not had a chance to try things yet.

may try to cook something up at my friends although i worry about the cc from their kitchen. I will have lots of pictures to upload once I have time.

I know these companies would love to get into the growing US market and just hope we can all find a way to make it happen!

      Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.

      One doctor suggested it, but then seemed irritated when I asked follow-up questions. Oh well—

      @GlorietaKaro, your respiratory reactions to gluten make me wonder if there might also be an allergic (anaphylaxis) component at work here.

      Thanks to both of you for your responses!  Sadly, even after several years of very strict gluten avoidance, I remember the symptoms well enough that I am too frightened to risk a gluten challenge— heartbeat and breathing problems are scary— Scott, thank you for the specific information— I will call around in the new year to see if I can find anyone. In the meantime, I will carry on has I have been— it’s working! Thanks also for the validation— sometimes I just feel crushed by disbelief. Not enough to make me eat gluten though—
