My 1st Attempt At gluten-free Yeast Bread

Well, I'm pretty happy with the results - tastes great but not the texture I expected. But perhaps I'm expecting too much? Is it possible gluten-free yeast breads to have a similar texture to regular yeast breads? I've made wheat-based batter breads (which are beaten but not kneaded) & know their texture is different. So maybe this is true of gluten-free yeast breads too?

Still, I was pleasantly surprised with how good it tasted. Since it was my first try, I expected it to be edible but not that good. I sure won't miss the taste of regular bread if it always tastes this good. But no way would I be able to use this to make sandwiches. Not a big thing as I don't eat them often anyway but sometimes would be nice.

Okay, the texture on my bread was more like a muffin but not so oily & held together better but still could crumble easily if I pulled it apart. Is this what I should expect? The holes were quite open too - sort of lacy if you think of it as bread. Fine if you think of it as a muffin. I hope I'm conveying this right. Now if it shouldn't be open textured like that, does anyone know what does that? Is it too much leavening agent? I used yeast but also a little of baking powder & cream of tartar as I saw suggested in one site. I added xantham gum & some gelatin too. Would gelatin make it more open, less open, or not affect it that way?

I must admit while I was making the bread, I was griping away. :angry: I kept stopping to scratch as my DH is driving me crazy. And I had added some coconut flour & when I added the liquids, the whole thing thickened up like setting cement. I figured I'd blown it. But I added LOTS more liquids in milk, another egg & some oil till I could beat it again. Didn't know what to expect but I'm happy now. Still, I'd like to fine tune the results so I can get back to baking like I used to.

Thanks everyone! It's nice to have such a kind bunch of people helping one another. ;) This is so new to me & somehow, it still doesn't seem real to me I have gluten intolerance.

If you want to go the easy (but probably pricier) way, Breads by Anna has a very good yeast-free, gluten-free (and many other things-free) bread mix. You can order the mix online at www.glutenevolution.com. Be sure you get the yeast-free one, as there are also several that do contain yeast.

      In this case the beer is excellent, but for those who are super sensitive it is likely better to go the full gluten-free beer route. Lakefront Brewery (another sponsor!) has good gluten-free beer made without any gluten ingredients.

      Welcome to the forum, @catsrlife! Celiac disease can be diagnosed without committing to a full-blown "gluten challenge" if you get a skin biopsy done during an active outbreak of dermatitis herpetiformis, assuming that is what is causing the rash. There is no other known cause for dermatitis herpetiformis so it is definitive for celiac disease. You would need to find a dermatologist who is familiar with doing the biopsy correctly, however. The samples need to be taken next to the pustules, not on them . . . a mistake many dermatologists make when biopsying for dermatitis herpetiformis.

      You state in an earlier post that you don't have celiac disease. Here in this post you state you will "be doing another test". What will this test be looking for? What kind of celiac disease testing have you had done? If you have used a Entero Labs it sounds like you have had stool testing done for celiac disease which is not widely accepted as a valid celiac disease diagnostic testing method. Have you had blood antibody testing for celiac disease done and do you realize that for antibody testing to be valid you must have been eating generous amounts of gluten for a period of weeks/months?

      No, I've not been diagnosed as celiac.  Despite Entero Labs being relocated to Switzerland/Greece, I'll be doing another test. After eating wheat products in Greece for 4 weeks, there wasn't any reaction.  However, avoiding it here in the states.   Thanks everyone for your responses.
