really confused Newbie

Hi, i am so confused.... I was reading everyones answers to ketchup, soy sauce, rice krispies etc..... My confusion is this, I just figured out modified corn starch is okay, so how do you know rice krispies are not, or soy sauce, or anything?? what ingredients are in those that make it not okay? None of them say wheat products.... im so overwhelmed how do you know what ingredients to look for. I have checked out the site that says what ingredients are not okay.... but nothing on soy sauce or ketchup were listed on there so how do you know?

Rice krispies (and a lot of cereals) have malt. Soy sauce has wheat, unless you have the kind that has no wheat. If the ingredients only list soy and/or salt, you're OK.

If something says 'malt' you should assume it's barley malt until proven otherwise.

It's only overwhelming at the start, things do get easier, hang in there.

modified corn starch is fine, modified food starch is suspect. The problem with rice cripsies is the malt syrup or malt flavoring - malt is made from barley, which also has gluten. Most soy sauces actually list wheat as an ingredient. I've heard that one very cheap brand is safe, but i use the gluten-free organic tamari becuase it tastes better. I think ketchup is usually fine. I know there are several 'not safe' lists - i think the parent site of this board has a list - celiac.com

This will make your life a little (well, a great deal) easier. Here is a listing of Companies who will clearly list all forms of gluten on their ingredient list. So, if you do not see wheat, rye, barley and malt on the ingredient list of these products, it just isn't in there and safe for people with Celiac.

      I eat a lot of dairy but its intermittent is this burning so I would assume it would happen all the time. Plus I have been tested for lactose intolerance  etc and I am fine and the other symptoms of that I don't get. As a aside  my dad died last month after a long illness so I wonder if the stress of that might be a influence as a bodily reaction to stress.

      You should be fine.  You may start feeling better within a few days.  Someone who is very low in thiamine may notice improvement within hours.   Did you get the NeuroMag  or another magnesium supplement?

      Yes Bobs redmill cgf oatmeal I started when I became gluten-free. So taking all 3 with breakfast should work? Will I notice any reactions getting used to these or should I be fine. Thanks

      Hello, @pilber309, welcome to the forum! Are you currently consuming dairy?   You mentioned something about lots of yogurt and cheese, but did you cut it out or are you eating lots of it?   Could you clarify please? Some people with Celiac react to casein, the protein in dairy the same as to gluten with antibodies and villi damage.
