Spiced Pumpkin 'ice Cream'

I got my ice cream maker!! I got my ice cream maker! :lol:

It's chilling in the freezer right now.

Spiced Pumpkin 'Ice Cream'

Gluten, Soy & Dairy Free

1 cup pumpkin puree

2 cups rice, soy, almond or dairy milk (organic, whole)

2 tb dark rum

1 ts pure vanilla extract

3/4 cup white sugar

1 ts cinnamon

1/2 ts ginger

1/4 ts cardamom

Instructions for basic, 1 1/2 quart ice cream maker.

Combine ALL ingredients in a large mixing bowl and combine (using a whisk or

hand mixer) until sugar is dissolved.

Turn machine on and pour mixture into freezer bowl through ingredient spout.

Let mix until thickened, about 25-30 minutes.

I like mine with pure maple syrup on top! hahaha and toasted hazelnuts.

(now if I had my waffle cone maker thingie I'd have gluten free ginger waffle cones to put it in...:)

I have a can of pumpkin in the kitchen, and I think I'll make this tonight! I've been craving "ice cream"--although I'll make it with my almond milk. I may cut back somewhat on the sugar, too.

i may even just go to walmart and see what kind of cheapness they have over there. i know, have a can of pumpkin in my cupboard that i was just eyeing ;)

I'm a little disappointed....I went to make the ice cream and I realized that the bucket to my ice cream maker wasn't frozen :o:angry::huh:

We moved here last fall--in my old house, I used to keep it in the freezer all the time so I could make some when the mood hit. I put it in just now, so I'll be able to make it tomorrow :D

Sweetfudge I think Walley's carries Hamilton Beach or something like that. The one here is under construction so I couldn't find where they moved their electronics to! :) Target had one too but it was a little rinky-dinky and I didn't trust it to last through one summer. :lol:

Sorry for the double post! B)

Mine is done and I am not sure if it's just mine.. but I am not so sure about the texture, the puree seems to be seperating from my rice milk... maybe mine wasn't quite cold enough.

Will practice. Let me know how all of your's turns out!

Kay it's an hour later, and I stuck it in the freezer in a tupperware and I stirred it up and it's fine now! :)

Don't commercial ice creams often have gums like guar, locust bean, or xanthan? That might help thicken and emulsify it.

I've been kicking around some ideas to make an "ice cream" sort of thing using coconut, no sugar, no dairy, and no eggs. But I need to use a blender since that's all I got besides "wrist power". I hope I'm not expecting too much :lol:

I saw a recipe for cocunut banana ice cream somewhere. But I just figured I would freeze the bananas and put them in my Vita-Mix with full fat cocunut milk with a little vanilla extract, pinch of salt and some stevia if needs more sweetness. Just a touch of stevia so it isnt bitter. And considered adding pineapple to it. Pina Colada ice cream. Yummy!!

I know I have seen a lot of Soy Lecithin and Carageenan in ice creams, I could try Xantham and see if it doesn't help next time! :)

Pineapple is one of my favorites to put in with coconut in various recipes :) But too much water content will form ice when frozen. I did one experiment with something in the fridge that resembled ice cream quite nicely, but frozen it was too solid due to water content. I'm inclined to think coconut cream would work better than the milk, or just the pure oil.

On the Stevia, I've found the pure powder to be free of bitterness. The liquids do have an aftertaste IMO. I use Simply-Stevia, by Stevita. It's not only the highest purity available, but the only one not produced in China. In my early experimenting with Stevia, I found it tastes better when the food is cold. I also find that adding salt really helps. I probably use about the same measure of salt as Stevia, though I generally don't measure the salt.

If you chill bananas, they get very brown. The skin will turn black in the fridge, and brown in the freezer.

I made it a little while ago, and am having some right now! :D

It's really good--I used almond milk and only 1/2 cup of brown sugar and it's plenty sweet enough for me.

I topped mine with a touch of pure maple syrup and some chopped walnuts! Delicious!!! Thanks again, Collette :)

YAY Fantastic news! I don't think I can have almond milk, the brand we have here @ my store has carageenan in it and I am intolerant :)

      Hi all I’ve been celiac for 4 years now, I’ve done pretty well to avoid it thus far. Last night I took the wrong pizza out of the freezer and ate the whole lot!! The non gluten and gluten pizza boxes are both very similar.   2 hours later I was throwing up violently on my hands and knees over the loo.  .horrendous stomach pains,  My hair was wet from sweat every part of my body was wet. What an awful experience, just had a bad headache today  fortunately.    Is their any products/pills anyone takes if they have realised they have just been glutened to make the symptoms a little less worse.  thanks

      Yes, do take your B Complex with Benfotiamine or Thiamax.  Thiamine interacts with each of the other B vitamins in the B Complex to make energy and enzymes, so best to take them together earlier in your day.  Taking them too close to bedtime can keep you too energetic to go to sleep.   The Life Extension Benfotiamine with Thiamine is Benfotiamine and Thiamine Hydrochloride, another form of thiamine the body likes.  The Thiamine HCl just helps the Benfotiamine work better.   Read the label for how many milligrams are in them.  The Mega Benfotiamine is 250 mgs.  Another Benfothiamine has 100 mgs.  You might want to start with the 100 mg.    I like to take Thiamax in the morning with a B Complex at breakfast.  I take the Benfotiamine with another meal.  You can take your multivitamin with Benfotiamine at lunch.   Add a magnesium supplement, too.  Thiamine needs magnesium to make some important enzymes.  Life Extension makes Neuro-Mag, Magnesium Threonate, which is really beneficial.  (Don't take Magnesium Oxide.  It's not absorbed well, instead it pulls water into the digestive tract and is used to relieve constipation.)  I'm not a big fan of multivitamins because they don't always dissolve well in our intestines, and give people a false sense of security.  (There's videos on how to test how well your multivitamin dissolves.).  Multivitamins don't prevent deficiencies and aren't strong enough to correct deficiencies.   I'm happy you are trying Thiamax and Benfotiamine!  Keep us posted on your progress!  I'm happy to answer any questions you may have.

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?
