Need Egg Free, Dairy Free And Gluten Free Ideas

A friend of mines son was just diagnosed with egg, gluten and dairy intolerances, so they're out of ideas. The little boy is Autistic and can't really talk, so it's difficult to find out what he likes and doesn't like.

They're mainly looking for meal and snack ideas. He is texture phobic apparently...so he likes things like apple sauce, but not cottage cheese (just an example.)

He really loves carbs right now...pasta, etc. So, any ideas would be greatly appreciated! :)

Cherrybrook Kitchen chocolate cake mix is gluten-free, dairy- free, and egg- free even after you follow the instructions on the box. I made it in a mini-muffin tin.

Instead of the usual pasta with red sauce I saute a little onion and garlic in Earthbalance and/or olive oil. Add chopped ham and finely chopped broccoli(fresh or frozen) or frozen peas and toss with pasta.

My husband made great tofu hamburger steaks this week. I don't have a recipe, he's a cook by feel kind of guy. Instead of the breadcrumbs and egg he used tofu. Added finely chopped carrots and onion etc. shaped and sauteed. They held together well and were moist. I'll see if I can find a similar recipe and post a link if I do.

His "recipe" is like this but used tofu in place of the egg and breadcrumbs. He said he used almost the same amount of tofu and ground beef but less tofu would be OK too. You can't see the tofu in the finished product. He makes the same kind of sauce as in this recipe.

My 4 yo loves rice cakes. I posted a recipe for home-made cereal bars here: Open Original Shared Link but m y 4-yo wont eat anything sugary or sticky. You could try making bread sticks out of chebe mixes (but i guess most chebe has milk in it, i think theres one without but i havent found it). My 4 yo also loved, for a while, puffed corn cereal I found at the health food store in a bag - nothing in it but corn. I eat a lot of tortilla chips. Does he like baby carrots?

The book "Cooking Free" will help alot, by Carol Fenster. I just got it or I could help you. She gives recipes and food sensitivity versions. Also read up on how to remove mercury from the body. I saw a program on the internet, wish I could find it for you, that showed how well kids got after the mercury was removed from their bodies. Pregnant mothers and vaccinations can give the child mercury. Mercury can cause autism. Gotta run hope this helps...

Try the magazine Living Without. I get annoyed with the magazine because the recipes usually have lots of ingredients elimnated and I only need to elinate gluten. I have a Jules Shepard Cookbook and most of her recipes include alternative for the things many people are allergic to.They have the magazine at our Whole Foods Market here.

      So the tTG-IGA at 28 is positive for celiac disease. There are some other medical conditions that can cause elevated tTG-IGA but this is unlikely. There are some people for whom the dairy protein casein can cause this but by far the most likely cause is celiac disease. Especially when your small bowel lining is "scalloped". Your Serum IGA 01 (aka, "total IGA") at 245 mg/dl is within normal range, indicating you are not IGA deficient. But I also think it would be wise to take your doctor's advice about the sucraid diet and avoiding dairy . . . at least until you experience healing and your gut has had a chance to heal, which can take around two years. After that, you can experiment with adding dairy back in and monitor symptoms. By the way, if you want the protein afforded by dairy but need to avoid casein, you can do so with whey protein powder. Whey is the other major protein in dairy.

      hi, i want to say thank you to you and @trents   . after 2 phone calls to my GI, her office called me back to tell me that a blood test was “unnecessary” and that we should “follow the gold standard” and since my biopsy did not indicate celiac, to follow the no dairy and sucraid diet. i luckily have expendable income and made an appt for the labcorp blood test that day. i just got my results back and it indicates celiac disease i think 😭   im honestly happy bc now i KNOW and i can go gluten free. and i am SO MAD at this doctor for dismissing me for a simple blood test that wouldn’t have cost her anything !!!!!!!!!!! im sorry, im so emotional right now, i have been sick my whole life and never knew why, i feel so much better already   my results from labcorp:   Celiac Ab tTG TIgA w/Rflx Test Current Result and Flag Previous Result and Date Units Reference Interval t-Transglutaminase (tTG) IgA 01 28 High U/mL 0-3 Negative 0 - 3 Weak Positive 4 - 10 Positive >10 Tissue Transglutaminase (tTG) has been identified as the endomysial antigen. Studies have demonstrated that endomysial IgA antibodies have over 99% specificity for gluten sensitive enteropathy. Immunoglobulin A, Qn, Serum 01 245 mg/dL 87-352

      Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.
