My Daughter's gluten-free Banana Bread Won Grand Champion At County Fair!

The judge really really liked it. She said, "do you have part of this loaf left at home so that you can go home and freeze the rest for State Fair?" She is to pick a select few to compete at the State level and our gluten-free recipe made it over gluten loaves! She had sliced it open to evalute it and had nothing but good things to say. What a huge encouragement to my little girl who has been having seizures. Proof that we can eat just as well as anyone else.

"The" Recipe

We had quiet the evening with my DD for she was so elated that we could NOT get her to settle down for bed last night. It's so wonderful to see her so proud of herself after a particularly difficult two months from illness. I only hope she can repeat this loaf for State Fair. Plus, I think more good news is needed on this forum.

Here is the recipe. . . the magical ingredients are the soy flour (I know, this one is debatable), the extra egg, and using a unique shortening called Spectrum (Non-hydrogenated solid palm oil. Can buy at a health food store).

Sifting is important too.

BEST BANANA BREAD

Makes 1 loaf, 4 x 8

1 cup of soy flour

Congrats, how exciting. I won some fair ribbons for baking when I was in high school and I was pretty proud of myself so I am sure your daughter is feeling pretty darn good. :D

      Thank you for all the excellent information. I moved from Wyoming to California. May be its where I am located but So far none of the Costco Kirkland brand I have looked at is labeled gluten free. Same with the Sam's Members Mark. The Kirkland nuts you mention all say they are processed in a plant that processes wheat.  I am going to keep checking. Thank you. The Azure Market looks promising 😁 Take care S

      I could not find the thread, but I recall at least one user who was drinking regular gluten beer daily but getting celiac blood tests done often (I think it was monthly) and doing a biopsy each year and all celiac disease tests were always negative. Everyone is different, but in general regular beer would be considered low gluten (not gluten-free!). I have no issues with Daura Damm, but those who are super sensitive might.
