Shrimp & Mango Salad

Gluten Soy, Dairy & Nightshade Free

I made this for dinner last night. I love love love mango with shrimpies! :)

I scooped mine up with organic tortilla chips and had some guacamole too.

dressing:

1 1/4 cup olive oil

3 tb fresh lime juice

1 large organic egg

2 tb good quality sesame oil

1 fresh clove garlic, roughly chopped (will be going into food processor)

1/4 ts ginger powder

1 ts kosher or sea salt

2 fresh mangoes, peeled, seeded and diced small (about 1")

1 lb. cooked shrimp

1/4 cup sweet maui onion (or green onion would be good too!)

1/4 cup chopped fresh cilantro

2 tb salted macadamia nuts, chopped fine

1 tb lime juice

1 tb coconut milk

Make sure all dressing ingredients are at ROOM TEMP please before processing! Or you will make an oily mess and I don't want anyone crying! HAHA :lol:;)

In your favorite food processor, place egg, and 1/4 cup olive oil, salt, ginger powder, process for 60 seconds. While motor is running, add 1/2 cup more olive oil, then alternate to lime juice, then remaining olive oil. Process 2 more minutes, until thick, scrape down sides, then (with motor back on) add fresh garlic, and sesame oil. Taste and adjust salt or other seasonings. Cover and put in fridge for at least 2 hours. *If you want yours a little sweeter, add 2 tablespoons of pineapple or orange juice.

In a medium mixing bowl, put diced mango, shrimpies, onion, cilantro, chopped macadamia nuts, lime juice and coconut milk. Dress to taste.

Serve with tortillas or your favorite gluten free bread for sandwiches!

What I do is look at what I have in the refrigerator (and in my freezer and cupboards) and I think 'hmm, that might be good' and then I test it once or twice and VIOLALA! :lol:;)

Since I do it for myself anyways, I just like to share with others who might like it too! B)

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
