Fall is in the air! I'm so excited! I need new recipes! Everyone share your favorite autumn recipe.

I've got this amazing butternut squash soup recipe, but I have yet to try it without milk and butter. I feel like that might be a crucial aspect to it. Anyway, here's the recipe, and if anyone's tried squash soup w/ DF subs, let me know!

Homemade Squash Soup

4 c cooked squash (butternut is the best, IMO)

3 c whole milk

1/2 stick real butter (don't use margarine)

1/2 tsp salt

1/4 tsp pepper

1 1/2 tbsp brown sugar

Mix all ingredients together in a large pot. Simmer over med/low heat for 15 minutes.

(Here's where I like to throw mine in the Vitamix and puree it. You can do all or just half...or skip altogether).

Chill in the fridge overnight to let the flavors blend. Heat and serve.

Another great recipe - Cincinnati Chili! Since I can't tolerate beans, I love this one when I'm in the mood for a hot bowl of chili. It's really good with some rice mixed in, or served over pasta or baked potatoes. If you can eat cheese, throw some cheddar on top. Oh, one thing I've also tried with this recipe is to use leftover meat. I once used a combination of pot roast (shredded), ground beef, and ground turkey. It was actually pretty good. Just skip the sauteing step.

Cincinnati Chili

1 lb extra lean ground beef

1 clove garlic

1 tsp (estimated) onion powder (not big onion fans here)

1 tbsp chili powder

1 tsp allspice

1 tsp cinnamon

1 tsp cumin

1/2 tsp red pepper

1/2 tsp salt

2 tbsp unsweetened cocoa or 1 oz unsweetened bakers chocolate, grated

1 15 oz can tomato sauce

1 tbsp worcestershire sauce

1 tbsp cider vinegar

1/2 c water

In a large pot or frying pan, over medium-high heat, saute ground beef, garlic and chili powder until meat is slightly cooked. Drain fat.

Add the remaining ingredients. Reduce heat to low, and simmer uncovered 1 1/2 hrs. Remove from heat. Serve over rice, pasta, potatoes.

Now throw on your favorite sweater, curl up on the couch with a good book, and enjoy!

I love everything about fall - including warm, filler-up meals

Cider Sausage ---

1 pkg sweet italian sausage

large jar chunky applesauce

sliced onions to taste

brown sausage in pan

then add applesauce, onions, and sausage to a 9x13 pan and bake (maybe 30 minutes?)

Serve with crackers for appetizer - or alone

(I like it with nut thins)

Orange Pork

Pork Tenderloin

salt

pepper

orange marmalade (about 1/2 jar)

1 T water

1 1/2 t. ginger

rice

season pork w/ salt & pepper to taste

bake in roasting pan until internal temp is 160 degrees

stir together marmalade, water, and ginger until well mixed.

heat sauce in micro or sauce pan

bed of rice, topped with sliced pork, w/ sauce drizzled over it.

Great with Garlic Green Beans

** We cook extra pork while the oven is cranking, then for leftovers we chop the pork, make another batch of sauce, and stir fry in wok with a little soy sauce, green onions and sliced almonds YUM!

yum! that sausage sounds great! i bet adding rice to the bake would be good to make it into a meal. i'd cook the rice in apple cider or something :D awesome!

oh, that recipe reminds me of something i read in "Taste of Home" the other day! cider floats! it was basically vanilla ice cream, chilled apple cider, and cinnamon - throw it all in a blender, and serve! once I perfect a recipe for vanilla flavored coconut "milk" ice cream, i'll definitely have to try that one too!

I don't like my squash soup too sweet, so I add watercrest or arugula to the mix and puree them together then top the soup with my homemade cranberry chutney. Very yummy.

CRANBERRY CHUTNEY

4 cups (1L) cranberries

1 cup (250 ml) sugar

1 cup (250 ml) water

3 Tbsp (50 ml) finely chopped onion

3 Tbsp (50 ml) white vinegar (I've also used apple cider and it was fine)

2 Tbsp (25ml) Worchestshire sauce ( I use 5 Tbsp of apple cider vinegar instead as this is not gluten free in Canada)

1 tsp (5ml) salt

1 tsp 5ml) ground dried chilies

1/2 tsp (2ml) cinnamon

In a medium saucepan, combine cranberries, sugar and water. Heat, stirring, until sugar dissolves. Continue cooking until berries pop, about 5 minutes. Stir in onion, vinegar, Worcestershire sauce, salt, chilies and cinnamon; simmer for 5 minutes more, stirring occasionally. Ladle into sterilized jars and seal. Makes about 6 cups of sauce. I made a triple batch which worked just fine.

I made this the other day, very very yummy.

Pear Clafoutis with Almonds

2 medium pears (about 12 oz. total)

2 Tbs. pear eau de vie, such as Poire William *

3 large eggs

1/3 cup sugar

1/3 cup gluten free flour

Wonka, that chutney sounds really good! What else do you put it on? I've been craving cranberries! Namely, cranberry nut bread! Mmm, that is another favorite fall recipe! Thanks for reminding me of it :)

If you can have coconut milk, this recipe sounds great. It's hot here, AGAIN, so no soup yet. But, I've got my eye on it and am going to give it a try when the weather finally gets cool. (Well, as cool as it does here in the south!)

We have it with turkey, and other poultry, as well as the soup. I like to make a gluten free Lavash and wrap it around the turkey and chutney. (the lavash is quick and easy throw together and cooks in about 15 minutes). If you want the Lavash recipe let me know and I can post it.

      I think, after reading this, that you areso traumatized by not being able yo understand what your medical advisors have been  what medical conditions are that you would like to find a group of people who also feel traumatized who would agree with you and also support you. You are on a crusade much as the way the US Cabinet  official, the Health Director of our nation is in trying to change what he considers outdated and incorrect health advisories. He does not have the education, background or experience to be in the position he occupies and is not making beneficial decisions. That man suffered a terrible trauma early in his life when his father was assonated. We see now how he developed and worked himself into a powerful position.  Unless you are willing to take some advice or  are willing to use a few of the known methods of starting on a path to better health then not many of us on this Celiac Forum will be able to join you in a continuing series of complaints about medical advisors.    I am almost 90 years old. I am strictly gluten free. I use 2 herbs to help me stay as clear minded as possible. You are not wrong in complaining about medical practitioners. You might be more effective with a clearer mind, less anger and a more comfortable life if you would just try some of the suggestions offered by our fellow celiac volunteers.

      Thus has got to STOP , medical bit believing us! I literally went through 31 years thinking it was just a food allergy as its downplayed by medical if THEY weren't the ones who diagnosed us! Im positive for HLA-DQ2 which is first celiac patient per Iran and Turkey. Here in the States especially in Cali its why do you feel that way? Why do you think your celiac? Your not eating gluten so its something else.Medical caused me depression. I thought I was safe with my former pcp for 25 years considering i thought everything I went through and going through will be available when I get fired again for health. Health not write-ups my health always come back when you're better.Im not and being tossed away at no fault to my own other than shitty genes.I was denied disability because person said he didn't know how to classify me! I said Im celiac, i have ibs, hernia, sciatica, high blood pressure, in constant pain have skin and eye issues and menopause intensified everything. With that my celiac nightmare began to reprove my disregarded disease to a bunch of clowns who think they are my careteam when they said I didn't have...I feel Im still breathing so I can fight this so no body else has to deal with this nightmare. Starting over with " new care team" and waisting more time on why I think I am when diagnosed in 1994 before food eliminated from my diet. P.s everything i went through I did write to medical board, so pretty sure I will continue to have a hard time.

      @Scatterbrain, Thiamine Vitamin B1 and amino acid Taurine work together.  Our bodies can make Taurine from meats consumed.  Our bodies cannot make Thiamine and must consume thiamine from food.  Meat is the best source of B vitamins like Thiamine.   Vegetarians may not make sufficient taurine since they don't eat meat sources of taurine.  Seaweed is the best vegetarian source of taurine. Vegetarians may not consume sufficient Thiamine since few veggies are good sources.  Whole grains, legumes, and nuts and seeds contain thiamine.  Many of these sources can be hard to digest and absorb for people with Celiac disease.   You may find taking the forms of thiamine called Benfotiamine or TTFD (tetrahydrofurfuryl disulfide) and a B Complex will give the benefits you're looking for better than taurine alone.

      @Jmartes71, I went to Doterra's site and had a look around.  The Doterra TerraZyme supplement really jumped out at me.  Since we, as Celiacs, often have digestive problems, I looked at the ingredients.  The majority of the enzymes in this supplement are made using black mold, Aspergillus!  Other enzymes are made by yeast Saccharomyces!  Considering the fact that Celiac often have permeable intestines (leaky gut syndrome), I would be very hesitant to take a product like this.  Although there may not be live black mold or yeast in the product, the enzymes may still cause an immune system response which would definitely cause inflammation throughout the body.   Skin, eyes, and intestines are all made from the same basic type of cells.  Your skin on the outside and eyes can reflect how irritated the intestines are on the inside.  Our skin, eyes, and intestines all need the same vitamins and nutrients to be healthy:  Vitamin A, Niacin B3 and Tryptophan, Riboflavin B2, Biotin B7, Vitamin C, and Omega Threes.  Remember that the eight B vitamins work together.  Just taking high doses of just one, vitamin like B12, can cause a deficiency in the others.  Taking high doses of B12 can mask a Folate B9 deficiency.  If you take B12, please take a B Complex, too.  Thiamine B1 can be taken in high doses safely without toxicity.  Thiamine is needed by itself to produce energy so every cell in the body can function, but Thiamine also works with the other B vitamins to make life sustaining enzymes and digestive enzymes.  Deficiencies in either Niacin, Vitamin C, or Thiamine can cause digestive problems resulting in Pellagra, Scurvy, and Gastrointestinal Beriberi.   If you change your diet, you will change your intestinal microbiome.  Following the Autoimmune Protocol Diet, a Paleo diet, will starve out SIBO bacteria.  Thiamine keeps bacteria in check so they don't get out of control as in SIBO.  Thiamine also keeps MOLDS and Yeasts from overgrowth.   Menopause symptoms and menstrual irregularities are symptomatic of low Vitamin D.   Doctors are not as knowledgeable about malnutrition as we need them to be.  A nutritionist or dietician would be more helpful.   Take control of your diet and nutrition.  Quit looking for a pill that's going to make you feel better overnight.  The Celiac journey is a marathon, not a sprint.   "Let food be your medicine, and let medicine be your food."

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.
