Spaetzle Disaster

I love german spaetzle or little sparrow dumplings sooooooooooo much.

Last night I tried making this pasta with rice flour, which was an absolute disaster......

I made them with bob red mill's all purpose baking flour and it worked

What is the best flour for dumplings????????????

I use 90% soba / buckwheat flour & 10% rice flour for spaetzle. They are darker with the buckwheat but really good.

Do the same for larger dumplings but not too large are they get like rubber balls!

I've made dumplings successfully using Bette Hagman's Featherlight Flour mix:

2 C. Rice Flour

2 C. Tapioca Flour

2 C. Cornstarch

2 Tb. Potato Flour (not potato starch flour)

I was just thinking of making chicken and dumplings this weekend
