I have been gluten free for about 1 month now. Usually when I get "glutenend" I know within a 1/2 hr, with ab pain and diarrhea. Last Night I went to Outback and ate from the Gluten Free menu. I was stuffed. I did not get pain or diarrhea last night. Then this morning I woke up sick to my stomach and have had severe diarrhea all morning and now I am starting to get really dizzy . I have tried to drink gatorade to help with dizzyness. Has this happened to anyone I am feeling awful. Were suppose to go on a work picnic later this afternoon. I hope it gets better. Is there anything I can do to make it go away.:(

There's not a whole lot you can do but drink alot of water through out the day to keep hydrated. Sorry didn't see your post until after picnic. Hope you were able to still go. Sounds like your glutening was more delayed than usual maybe cause you are healing. I usually always get the D the next morning but will be gassy within an hour of cc or accidental gluten. I find that eating out, even in with restaurants with a gluten free menu is a hit and miss kinda thing with cc. I try to go when they are least busiest so they can concentrate on my dinner better. As for the dizziness, I would drink a glass of apple juice but that is what works for me (orange juice gives me canker sores and gatorade doesn't have enough sugar to balance me out). Hope you are feeling better today!

Thanks for the info. I didn't get to go to the picnic due to the dizzyness. I thought I was going to fall over. It's better now. It feels like every time I get accidentally "glutened" the symptoms are so much worse. I can handle the D but NOT the Vertigo. That is horrible. I never had symptoms like that before.:( I hope it does not come back again.

My Friend works at Outback and (he's one of the cooks) When my food came back to him it said on the ticket. Gluten FREE. He asked the other cooks "what does that mean." Alot of people even the cooks at restaurants just think people can't have wheat and thats it. I was kinda mad he didn't know how to handle the food. The managers need to educate their staff on food safety and allergies. I can't complain too much at least they have a menu for us. :)

I was at a meeting at work yesterday and thought I could get away with eating the contents of two chicken salad wraps (wheat). There were crutons (wheat) in the chicken salad, which I removed...I thought. The graded cheese (I am casein sensitve) did not help. This morning I felt so sick. I have had several bouts of loose stool, awful muscle aches, ringing in the ears, and extreme fatigue. Had to call in sick today. Lesson learned...

Please don't do that again. We can't just remove the gluteny parts and not get sick. Celiac is an autoimmune reaction it takes only a very teeny tiny amount for us to reactivate the antibodies. We can't even safely use lotions or shampoos with gluten ingredients. I hope you feel better soon and as you said lesson learned, unfortunately the hard way.

The discovery of the vitamin D receptor in multiple immune cell lineages, such as monocytes, dendritic cells, and activated T cells credits vitamin D with a novel role in modulating immunological functions and its subsequent role in the development or prevention of autoimmune diseases.  The Implication of Vitamin D and Autoimmunity: a Comprehensive Review

Definitely get vitamin D 25(OH)D.  Celiac Disease causes vitamin D deficiency and one of the functions of vitamin D is modulating the genes.  While we can survive with low vitamin D as an adaptation to living in a seasonal environment, the homeostasis is 200 nmol/L.  Vitamin D Receptors are found in nearly every cell with a nucleus, while the highest concentrations are in tissues like the intestine, kidney, parathyroid, and bone.  A cellular communication system, if you will. The vitamin D receptor: contemporary genomic approaches reveal new basic and translational insights  Possible Root Causes of Histamine Intolerance. "Low levels of certain nutrients like copper, Vitamins A, B6, and C can lead to histamine build up along with excess or deficient levels of iron. Iodine also plays a crucial role in histamine regulation."

I forgot to mention my suspicion of the high amount of glyphosate allowed to be used on wheat in USA and NZ and Australia. My weight was 69kg mid-2023, I went down to 60kg in March 2024 and now hover around 63kg (just after winter here in NZ) - wheat-free and very low alcohol consumption.

Hi Jess Thanks so much for your response and apologies for the long delay in answering. I think I must have been waiting for something to happen before I replied and unfortunately it fell off the radar... I have had an upper endoscopy and colonoscopy in the meantime (which revealed 'minor' issues only). Yes I do think histamine intolerance is one of the problems. I have been lowering my histamine intake and feeling a lot better. And I do think it is the liver which is giving the pain. I am currently taking zinc (I have had three low zinc tests now), magnesium, B complex, vitamin E and a calcium/Vitamin C mix. I consciously think about getting vitamin D outside. (Maybe I should have my vitamin D re-tested now...) I am still 100% gluten-free. My current thoughts on the cause of the problems is some, if not all, of the following: Genetically low zinc uptake, lack of vitamin D, wine drinking (alcohol/sulphites), covid, immune depletion, gastroparesis, dysbiosis, leaky gut, inability to process certain foods I am so much better than late 2023 so feel very positive 🙂

Hi and thank you very much for your detailed response! I am so glad that the protocol worked so well for you and helped you to get your health back on track. I've heard of it helping other people too. One question I have is how did you maintain your weight on this diet? I really rely on nuts and rice to keep me at a steady weight because I tend to lose weight quickly and am having a hard time envisioning how to make it work, especially when not being able to eat things like nuts and avocados. In case you have any input, woud be great to hear it! Friendly greetings.
