Gluten, Milk, Egg And Whey Free Recipes

I am really needing help with coming up with some recipes. My family of 6 has been on a gluten free diet for about 1 1/2 now. We recently found out that are 3 yrs old is allergic to milk, eggs and whey. Fixing foods has been a problem. Shopping is as hard as fixing foods. There are not alot of places that even sale gluten free items much less milk free. I have always been a plane jane cook. Meats, veg, fruit and bread. With all of these allergies I'm having to learn how to cook and not doing to well at it. My family love fresh veg. and fruits. However getting children to try new foods have been a chore. ages range from 12 to 3. I've tried new spices on the meats to give it a different flavor. That only goes so far. If any one has any recipes that will work for our diet it would be most helpful. I also need a good recipe for bread. Biscuits, rolls, light breads. We use soy milk or rice milk. I do have ener-g egg replacer. However my bread just dont turn out right. I dont know what I'm doing wrong. I have a bread machine but my bread still dosen't work out right. I haven't found any mixing around where I live that are milk and eggs free. There are alot that are gluten free. I need a recipe from scratch that will work in the oven or bread maker.

Gluten Free Quick and Easy by Carol Fenster is a good book for gluten-free/df/ef recipes.

My dd is a gluten-free/vegan so here are some recipes that will help.

tips: I use 1 1/2 cups milk and keep a banana in the freezer, just thaw and mash, spray waffle iron and don't over fill it, wrap and freeze for the toaster, makes about 15 waffles. I put berries in my dh waffles and mini chocolate chips in mine, dd like hers plain or makes a hashbrown sandwich :blink:

tips: make it into muffins, wrap and freeze individually for a fast snack or breakfast.

tips: be sure to use a gluten-free flour

tips: I dab the olive oil on it with the plastic wrap, make 2- 8" square pans and use the leftovers to make bread crumbs or french toast:

tips: I use light olive oil, my dd loves this french toast. I leave the bread in square slices or cut it into strips and you can use agave nectar or honey for the corn syrup. I also use maple syrup for the molasses.

tips: I use this for the flour mix- 1 cup sorghum mix, 1 tsp. baking powder, 1/4 tsp. baking soda, 1/2 tsp. xanthan gum. You can top it any way you desire before baking: chicken, taco meat, corn, olives, beans, cheese... Then after baking- fresh veggies, cheese, olives... Make 2 pies, each 1/2 and 1/2 of your family favorites and please them all at the same time.

I have yet to make these a little bigger and use for breadsticks or just for dipping. I spray them with olive oil instead of using egg.

I use garlic salt and some italian seasoning.

stir fry is quick and easy, I use braggs liquid aminos for the soy sauce.

Replacement ideas: you can sub these for cheese depending on your recipe: broken tortilla chips or gluten-free fritos on soups or on casseroles. Mashed potatoes either white or sweet, creamed corn, for fillings in casseroles like lasagna or enchiladas.

Sorry but I can't help you with your other bread problems, my dh and I are not allergic and other dd eats eggs and dairy.

If I think of some more ideas I will post them. :P

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?

      Thankyou so much for your words.Its a hard battle when a supposed well known hospital whose celiac " specialist " has down played me because my colon looks fine and put it in my medical and so pcp doesn't take seriously. In their eyes we all carry that gene.Im having alot of bad days trying to be positive because of it.
