It could be normal for you. Some of the flours might be ones that don't sit well with you. If the bread had guar gum that can have a laxative affect. It bothers me.

The granola could have contained oats. Oats are tricky. If you can tolerate them, run of the mill oats are usually made in a shared facility. That can be a source of CC. If they are made in a dedicated facility, that's better but some of us can't tolerate them at all.

Been on diet for almost 1 month.

You're pretty new to this and still healing. Give it some time. If you eat these items and it happens again, take note of all the ingredients and expect that one of them is getting you. Be watchful of those ingredients until you figure out the culprit.

Sorry, I think I got you mixed up with another poster.

I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.
