Cereal Tarts With Yogurt And Fresh Fruit

5 cups of chex rice

1 cup pecans (I used walnuts)

4 Strips of butter, melted (I used about a 1/4 cup, not sure what 4 strips is lol)

6 tablespoons of maple syrup

16oz plain yogurt

16oz vanilla yogurt

2 2/3 cups of fresh fruit

For tart shells - Preheat oven to 350 degrees. Place eigh 4-inch round tart pans with removable bottoms on baking sheet and set aside. Place chex rice in food processor fitted with a metal blade and process until well combined. Transfer cereal mixture to a large bowl and drizzle with melted butter, toss to combine. Stir in maple syrup. Evenly divide the cereal amoung tart shells and bake for 10 minutes.

Assemble tarts: remove shells from molds and transfer each to a serving plate. Mix yogurts together and top shell and add fruit. Serve immediately.

I do not have tart pans so I used a cupcake pan with liners. I used strawberries and raspberries for my fresh fruit. Put a little bit of melted chocolate on top. I also used 1/2 chex rice and 1/2 honey nut, makes a good crust if you need one. Was so good! Low in calories, very refreshing and tasty. Anyway, I found this online yesterday and made them last night so thought I would share with everyone.
